29 Ways to make Chicken in the Slow Cooker




Does your family eat a lot of chicken? In our house, I sometimes joke that we eat so much chicken that we could start clucking at any moment. I’m not complaining! I love chicken, and so does my family. Especially when there are so many tasty crockpot chicken recipes!

Chicken has to be one of the most versatile meat. You can fix crockpot chicken in dozens of ways–Tex-Mex, Italian, Asian and good old American BBQ. It’s a huge plus that chicken is also fairly affordable and some of the stores often put a good sale out on it, too!

Now that summer is here, I’m trying to avoid heating up my house as much as possible. So, if you’ve been reading my blog for any length of time, you know that I use my slow cooker a lot. It’s a time-saver and a great way to keep the kitchen cool as well. I love trying new things in my slow cooker, and over the years have created a nice little stash of favorite crockpot chicken dishes that I can whip up in there.

From mouthwatering curry to our favorite Asian chicken to some of my cheater barbeque go-to’s, here are 29 ways I use my slow cooker to cook a winning crockpot chicken dinner for my family.

Some of these recipes are also freezer friendly. That means you can stock your freezer and then pull one out in the morning on a busy day and pop it in and let the slow cooker do its thing. 4-ingredient Crockpot Chicken Recipes

Can I interest you in 4-ingredient recipes? Yeah, I thought so! Here are a few of these treasures, in no particular order

Apricot Soy Ginger Chicken can be made with or without the bones and the side dish possibilities are endless for this one!

Black Bean and Salsa Chicken is another favorite where the slow cooker does the work for you. And my kids actually said, “Wow!” when they tasted this one. Who among us can’t use a few extra “mom hero” points for a yummy dinner?!

Chili Sauce Chicken Legs may not be known for their photogenic qualities, but this is a kid-pleasing recipe that’s super easy to fix in the crockpot.

Honey Mustard Chicken only has 3 ingredients, unless you count shaking in a little salt and pepper. You really can’t beat an ingredient list that short!

Chicken and Broccoli “Stir Fry” technically can’t exactly be made in a slow cooker. But you can make a pretty good fake! I’ve made this recipe twice now.  It’s easy and quick to fix. The chicken gets cooked in stir fry sauce for several hours. The veggies are added later, so they don’t get mushy.

Zingy BBQ Chicken is a delicious way to use up small amounts of bbq sauce and salad dressing. Or just get creative with what you can round up in the fridge!

Did you know you can convert all kinds of recipes to cook in the slow cooker?  This Maple Apple Chicken started out as a skillet meal.  I didn’t have time to cook it right before dinner, but I did have a few minutes earlier in the day to put ingredients in the slow cooker.

Feel free to alter this Brown Sugar Chicken and Sweet Potatoes Recipe as you see fit.  Add more butter and brown sugar.  Or less. Or add apples too. Or use carrots instead of sweet potatoes.  I don’t think you can mess this one up. Adapt away!

Salad + these Crockpot Chicken Recipes = Dinner is served!

A Complete BBQ Chicken Dinner cooked in the slow cooker!  The trick is in foil packets and layering the food.

Please don’t let the sauerkraut deter you from trying this Lemon Chicken Baked on Sauerkraut.  It is so good! The chicken turns out moist and flavorful.  And the sauerkraut is quite as kraut-y or sour as it can be in other dishes.

I put this Italian Parmesan Herb Chicken and Potatoes together before church one Sunday morning.  It smelled (and tasted!) fantastic when we got home.  If you have garden fresh tomatoes, they make a wonderful side dish.

Baked Chicken with Summer Veggies is another stovetop recipe turned crockpot chicken option. And it’s all right there in one pot.

Chicken Spaghetti is one of those classic recipes that gets passed around alot. And the crockpot version is even easier than the original.

For those days when you’re craving Italian Cuisine

The combination of spices in Italian Seasoned Salt Chicken brings a wonderful Italian flavor to all kinds of chicken or pasta dishes.

You can start marinating the chicken for this Italian Chicken with Tomatoes recipe the night before, or just give it 20-30 minutes to marinate right before cooking.  The choice is yours. Do what works best with your schedule.

And let’s not forget this classic, easy and crowd-pleasing slow cooker Chicken Cacciatore! This dish is full of chicken, bell peppers and onions in homemade tomato sauce.  Red wine brings more flavor to the sauce, but you can leave this out if you need to.  The chicken and sauce are delicious served over hot pasta.

Perhaps Latin Cuisine is your favorite

And who doesn’t love Latin-inspired dishes? Honestly, I could eat it every night!

Several years ago, I discovered an easy way to make Crockpot Chicken Fajitas. The best part is all the flavors really cook well together. And leftovers are even better.

This Chicken Tacos  recipe was created simply by standing in front of the pantry and pulling out a few likely ingredients.  I needed something that would be ready to eat when we got home, with minimal fuss required. Oh, and I only had about 3 minutes to get it fixed and get out the door.

When the name of a recipe is Garlic Chicken with More Garlic, then you just know it’s going to be good! The garlic takes on a nutty, roasted flavor and the seasoning on the chicken compliments the other flavors.

Zesty Crockpot Chicken is another simple crockpot chicken recipe that doesn’t disappoint.  I like to serve it with couscous that I cook with the broth and onions from the chicken.

Garlic Rosemary Chicken is a great way to use up fresh rosemary from the garden. It’s a tasty version of basic chicken and potatoes.  I used boneless chicken, but the dish would have even more flavor if you used chicken with bones

And finally, there’s King Ranch Chicken. There are a million ways to make it, but this slow cooker recipe gets the gist of it.  The only thing missing is corn tortillas. The potatoes are filling in for the tortillas.
