This recipe for Apricot Soy Ginger Chicken is so easy. There are just 4 ingredients (plus salt and pepper).
You can fix it in the slow cooker or oven.
It’s great with sweet potatoes or butternut squash. Or Hawaiian Cole Slaw. Or Asian Broccoli Salad. Or any salad with a poppy seed or honey mustard or berry vinaigrette dressing.
Use any cut of chicken you like. Bone-in or boneless will work, just be sure to adjust the cook time for boneless.
Here’s what you’ll need:
Apricot Soy Ginger Chicken – in the oven or slow cooker
Ingredients
- 12 oz Apricot preserves
- 2 Tbs. soy sauce
- 1/4 tsp. ground ginger
- salt and pepper to taste
- 3 lb. chicken pieces
Instructions
- Stir together all the ingredients, except chicken, in a small bowl.
- Place chicken in baking dish or slow cooker.
- Pour sauce over top of chicken.
- Bake at 350 degrees for 1 to 1.5 hours.
- Or slow cook for 5-6 hours on high or 7-8 hours on low.

I have some homemade peach butter – how would this do in place of the apricot preserves?

I think it would work, but if it were me, I’d rather save the homemade peach butter for a place where the flavor would be the highlight, rather than a recipe like this one where it’s just one ingredient of several. Homemade peach butter is worth hoarding for biscuits or toast 🙂

Is this sugar free with the preserves?

Tiffany – there will still be natural sugars, even in an all-fruit preserve, but it won’t have added sugars. If you have a limited sugar intake, then the best option would be to check the numbers for sugars on your preserves jar and determine if it’s a good recipe for your diet.

This recipe looks yummy, but I would hate for people to think that there is no sugar in this recipe! Preserves are full of sugar.

That is true, Susan! There may not be added sugar in all-fruit preserves, but there are still natural sugars in fruit.
