Slow Cooker Chicken and Gravy over Rice

I’ve said it before and I’ll say it again.  Some foods just aren’t photogenic.  Please forgive me for this photo.

Thankfully, it tastes great.  Kid-pleasing comfort food.  And it’s a slow cooker meal, which is perfect for busy school days.  I adapted it from Mandarin Chicken and Rice Bake from the More with Less Cookbook.  I wanted something similar that could be fixed in the slow cooker.

Here’s what you’ll need to make it:

  • 2 lbs. boneless chicken breast
  • 1 onion, diced
  • 2 cans cream of chicken soup
  • 3 Tbs. soy sauce
  • black pepper, to taste
  • brown rice, enough for 6 people, cooked according to package directions

Place the chicken and onions in the slow cooker.  Stir the cream of chicken soup, soy sauce and pepper together and pour over the top of the chicken.  Cook on low for 7-8 hours or high for 5-6 hours.  Serve over hot, cooked brown rice.

This dish doesn’t have a strong taste of soy sauce.  The soy just makes the gravy rich and flavorful.

  1. I hear you on foods not being photogenic but it sounds delicious! Do you have something similar for beef tips? My daughter absolutely LOVES the hungry man beef tips with mashed potatoes – believe me, she only gets this once a year max bc of the chemicals, sodium, and just general yuckiness it brings to me when my husband lets her have it (we do NOT commercially prepared frozen meals on a regular basis). I’ve looked over a lot of recipes and nothing is right on the money – gravy, beef chunks/tips. thanks!

    • I do one with stew meat and cream of mushroom soup. i do add in sliced onions and sour cream for a stronganoff take, but you could leave those out!(and i now use homemade cream of soup)

      I make beef tips and rice. My kids love it. I just coat stew meat with flour and put in the crock pot with 16 oz of beef broth or vegtable broth and let is cook. It makes a nice gravy as it cooks. I have also put diced tomatoes in it. You can also use a chuck roast and just let it cook all day and it will shred easy and then use cornstarch to thicken the juices.

  3. Looks delicious! We at The Bitch Stopped Cooking definitely like slow cooker recipes because they’re relatively easy for people who might be new in the kitchen. Great for little kids, too, because they can help dump it all in. You’re so right about how some food is not photogenic. I think anything made in a slow cooker isn’t that appetizing looking in a picture.

  6. I do something similar to this with pot roast. I put a frozen roast in the oven at 200 degrees after putting a can of condensed mushroom soup and a packet of french onion soup mix over it. Let it cook all day. It makes the best gravy over eggs noodles. Not a healthy recipe but very yummy. I’d love to learn how to make a homemade condensed mushroom soup and onion soup mix to use instead.

  7. I make something similar. I don’t use soy sauce, but I mix onion flakes, minced garlic, chili pepper, and marjoram. I don’t really measure, and it doesn’t taste like chili pepper, but it gives it a bit of a kick and is really yummy! We put it over egg noodles!

  9. Is this chicken frozen when you add it to the slow cooker? I was planning to cook this for dinner but mine is just now out of the freezer.

    • You can start with frozen chicken if you have enough time. If you have 7-8 hours on high you could do frozen. Otherwise, pop the chicken in the microwave to thaw it out first.

  10. Thanks so much for the wonderful recipes! I use so many of them and my kids now think that I am a good cook! Love this recipe for its simple goodness. I made one change and used low fat soup to make it a little healthier without sacrificing the creamy goodness!

  16. Oh my! I put all this in the crock pot on Wednesday night and stuck in fridge. Thursday before I left for work I took it out & plugged it in. It is so good! A true comfort food. I brought some for lunch today!

    oh no! Is is completely ruined if I did add water to the soups?! I was distracted and didn’t read the comments before preparing 🙁 Anything I can do to try to salvage it now? It has only been cooking for about 10 minutes

    • It shouldn’t be ruined. The gravy will be thinner. When it’s all done cooking, put some flour in a container that has a tight fitting lid. Add some water and give it a good shake to mix it all up into a thick consistency. Take everything out of the cooker except the liquid. THen whisk in the flour/water mixture and let it cook on high for a few minutes. That should thicken it. You’ll probably need to add more salt and pepper too, but taste to see.

I’m thinking of doing this with some leftover Turkey, maybe I can just throw the leftover slices/chunks of already cooked turkey in the crock pot with all the other ingredients and just warm it really well and put over rice!! Yum! I’m ready to do that this morning!!! One of my favorite dishes…meat, soup, seasonings over rice!!! Love it!!
