This quick salad featuring avocado, tomatoes, and onion is a delicious, healthy side dish.
Try it with grilled chicken or fish. It would also be great served with tacos or enchiladas.
Avocado and Tomato Salad
- 3-4 large avocados diced
- 1-2 tomatoes diced
- ½ small yellow onion diced
- 1-2 garlic cloves minced
- 2 Tbs. olive oil
- juice of 1 lime
- salt & pepper to taste
- Dice avocados, tomatoes, onion and garlic and place in a serving bowl.
- Whisk together olive oil, lime, salt and pepper.
- Pour over salad and gently stir to combine.
