avocado tomato salad

 

This quick salad featuring avocado, tomatoes, and onion is a delicious, healthy side dish.

Try it with grilled chicken or fish. It would also be great served with tacos or enchiladas.

Avocado and Tomato Salad

Servings: 6

Ingredients

  • 3-4 large avocados diced
  • 1-2 tomatoes diced
  • ½ small yellow onion diced
  • 1-2 garlic cloves minced
  • 2 Tbs. olive oil
  • juice of 1 lime
  • salt & pepper to taste

Instructions

  • Dice avocados, tomatoes, onion and garlic and place in a serving bowl.
  • Whisk together olive oil, lime, salt and pepper.
  • Pour over salad and gently stir to combine.
