Chicken has to be one of the most versatile meat. You can fix crockpot chicken in dozens of ways–Tex-Mex, Italian, Asian and good old American BBQ. It’s a huge plus that chicken is also fairly affordable and some of the stores often put a good sale out on it, too!
Now that summer is here, I’m trying to avoid heating up my house as much as possible. So, if you’ve been reading my blog for any length of time, you know that I use my slow cooker a lot. It’s a time-saver and a great way to keep the kitchen cool as well. I love trying new things in my slow cooker, and over the years have created a nice little stash of favorite crockpot chicken dishes that I can whip up in there.

Some of these recipes are also freezer friendly. That means you can stock your freezer and then pull one out in the morning on a busy day and pop it in and let the slow cooker do its thing. 4-ingredient Crockpot Chicken Recipes
Can I interest you in 4-ingredient recipes? Yeah, I thought so! Here are a few of these treasures, in no particular order
Apricot Soy Ginger Chicken can be made with or without the bones and the side dish possibilities are endless for this one!
Black Bean and Salsa Chicken is another favorite where the slow cooker does the work for you. And my kids actually said, “Wow!” when they tasted this one. Who among us can’t use a few extra “mom hero” points for a yummy dinner?!
Chili Sauce Chicken Legs may not be known for their photogenic qualities, but this is a kid-pleasing recipe that’s super easy to fix in the crockpot.
Honey Mustard Chicken only has 3 ingredients, unless you count shaking in a little salt and pepper. You really can’t beat an ingredient list that short!
Chicken and Broccoli “Stir Fry” technically can’t exactly be made in a slow cooker. But you can make a pretty good fake! I’ve made this recipe twice now. It’s easy and quick to fix. The chicken gets cooked in stir fry sauce for several hours. The veggies are added later, so they don’t get mushy.

Did you know you can convert all kinds of recipes to cook in the slow cooker? This Maple Apple Chicken started out as a skillet meal. I didn’t have time to cook it right before dinner, but I did have a few minutes earlier in the day to put ingredients in the slow cooker.
Feel free to alter this Brown Sugar Chicken and Sweet Potatoes Recipe as you see fit. Add more butter and brown sugar. Or less. Or add apples too. Or use carrots instead of sweet potatoes. I don’t think you can mess this one up. Adapt away!
