Last weekend we had friends over for dinner and I made these baked beans. They were so good and easy. I combined ideas from several recipes books, including a church cookbook and the More with Less Cookbook. The result is a recipe that uses canned beans and cooks in the slow cooker. I wanted to use the slow cooker because baked beans taste best with a long cooking time, but I didn’t want to heat up the kitchen.

I was pregnant with my second child when my husband and I moved back to Wichita, KS. We had lived there once before for a few years, when my husband was fresh out of college. This time we had no place to move straight into, so an old friend let us stay at her house. She made us this skillet dinner and it’s been a favorite of mine ever since. I’ve substituted sweet potatoes for her original white ones, but the good memories remain the same.
Chicago Style Pizza Pot Pie – Take 3
This is my third time try at this recipe. It’s not that I didn’t like the first two tries. Quite the opposite, actually. We like it so much that it’s worth making over and over. This time I decided to try one great big pie, instead of the individuals that use ramekins. Not everyone has 6 ramekins or wants to go to the trouble to make them individually.
I’m happy to report that this is my favorite version and it’s also the easiest. It has an easy homemade crust, but I used store-bought pizza sauce. Italian sausage and mozzarella make it as meaty and cheesy as you would expect from a Chicago style pizza.
Red Beans and Rice with Ham
This recipe is a great way to use leftover ham. You could also make it with smoked sausage if you like. I had grilled ham slices the day before and needed to use up the extra. The recipe makes enough to feed about 8 people, so if your family is smaller you may want to only make half.

I found this recipe on a homeschool forum. Magistra said she put this in foil packets on the grill for about 20 minutes. That was my intention too, but it was starting to rain the night I made them, so I popped them in the oven instead. The meat was flavorful and very moist. This is a great way to dress up pork chops.
