Chicken Florentine Pizza

Every once in a while, I like a good cheater meal.  One that relies on a prepared ingredient to speed dinner prep.  This one uses two such ingredients – a jar of alfredo sauce and prepared pizza crust.  You could probably also count the bag of pre-washed spinach and shredded cheese too.

In fact, the only thing I really cooked for this was the grilled chicken.  If you’re in a big hurry, you could buy those grilled chicken strips from the meat section of the grocery.  I used the George Foreman to grill mine since the grill was covered with snow.

What can I say?  I like to cheat at dinner prep sometimes.  Call me lazy.

Scrambled Eggs and Peppers

This is more of a method than a recipe.  We ate it for dinner, but if you like a big breakfast, this would be great in the morning.

I used red and yellow bell peppers, onions and Italian blend cheese.  It paired up perfectly with biscuits.

Chicken and Broccoli Stuffed Shells with Alfredo Sauce

Sometimes limitations bring forth the best creations.

Recently, on a message board someone wanted to make stuffed shells.  She wanted to use chicken, no red sauce, no spinach and no ricotta.  She did have a jar of alfredo sauce.  I don’t know what the woman ended up making, but this is what I suggested.  It sounded so good, I decided to try it myself.

Chicken, broccoli and mozzarella cheese fill the shells which are covered with alfredo sauce and baked.  Bonus -the recipe makes enough to put some in the freezer.

Pesto Tomato Pizza

There may not be anything original about this, but it’s one of my favorite summer suppers.  And it only takes minutes to put together.  My kids aren’t big fans of tomatoes, so for them I make a cheese pizza or use cooked sausage that I’ve frozen.  Either way, everybody is happy and dinner is fast.

Chicago Style Pizza Pot Pie – Take 3

This is my third time try at this recipe.  It’s not that I didn’t like the first two tries.  Quite the opposite, actually.  We like it so much that it’s worth making over and over.  This time I decided to try one great big pie, instead of the individuals that use ramekins.  Not everyone has 6 ramekins or wants to go to the trouble to make them individually.

I’m happy to report that this is my favorite version and it’s also the easiest.  It has an easy homemade crust, but I used store-bought pizza sauce.  Italian sausage and mozzarella make it as meaty and cheesy as you would expect from a Chicago style pizza.

Pepperoncini Pasta with Grilled Chicken

While I planning a meal for after church on Sunday, my eye spotted a jar of pepperoncini peppers hiding in the back of the pantry.  I had bought them to make Italian Beef Sandwiches, but decided they would be great in a pasta dish.  I decided to go with a very light broth, as opposed to the cream sauces I often make for pasta.  The piquant taste of the pepper added spice and flavor.
