Backyard BarbequeIt’s the season for backyard barbecues!

I think one of my favorite things about backyard barbecues is the way it brings the family together for not just an hour at dinnertime, but an afternoon of fun and memories cooking and eating out under the big blue sky. There’s something about eating outside, off of the grill that just gives an extra special element to dinnertime. Not to mention an extra-good kick of flavors!

While grilling up meat and veggies is obviously the main part of a Backyard BBQ, the sides are equally as important!  A good side can really bring your meal to a new level and depending on what you serve, you can take your BBQ in all kinds of fun directions. I like getting creative with my sides, and there are so many delicious things you can choose from. Some of them are super simple. Some of them you can make in advance. All of them are really good and things we come back to time and time again.

Today I’ve got two recipes for you – BBQ Beef and Bean Pot Pie and Double Chocolate Pretzel Brownies.

The best family times and conversations happen around the table, so why not keep everyone there longer by adding dessert too.  I guarantee they’ll hang out in the kitchen when they smell these brownies baking.

These recipes couldn’t be easier.  They use common pantry ingredients and Betty Crocker and Bisquick mixes.  I love dinners that come together quick, but give us a chance to connect as a family.

Slow Cooker Hawaiian BBQ Chicken Sandwiches – an easy twist on an old favorite!

Does it get any easier than tossing chicken in the slow cooker with some barbecue sauce?  It’s a classic and a family favorite.  This recipe is really more of a twist on serving the barbecue chicken.  You start with those same two ingredients, but the sandwiches get bumped up a notch with the addition of pineapple slices and cheese.

I had intended to make another recipe I have for Hawaiian BBQ Sandwiches.  That recipe uses grilled chicken and ham.  It’s not hard, but I was feeling super lazy.  Plus, I’m loving using the slow cooker lately!

So I cooked the chicken with our favorite barbecue sauce in the slow cooker.  At dinner time, I shredded the chicken and served it on toasted buns, topped with sliced pineapple and provolone.  A quick turn under the broiler and they were ready to eat.

Oh my goodness!  The pineapple and provolone really set these sandwiches apart from plain bbq chicken sandwiches.  It added so much flavor to the meal and it’s an easy step.

Here’s what you’ll need:

Slow Cooker Hawaiian BBQ Chicken Sandwiches – an easy twist on an old favorite!

Serves: 6-8 servings

Ingredients
  • 2 - 2.5 lbs. boneless chicken breast
  • 1-2 cups barbecue sauce
  • hoagie buns
  • pineapple slices
  • provolone cheese slices
Instructions
  1. Put the chicken and bbq sauce in the slow cooker.
  2. Cook on high for 5-6 hours or low for 7-8 hours.
  3. Shred meat with a fork.
  4. Toast buns.
  5. Place meat on buns. Top with pineapple and cheese.
  6. Broil until cheese melts.

Want to add a little jolt to your BBQ Ribs recipe?  Save the leftover morning coffee.  That hit of java gives the barbecue sauce an extra depth of flavor.  And cooking them in the slow cooker makes it simple.

I used country style ribs with bones.  I’ve seen the boneless kind (which is kind of funny, since ribs really are bones) and we like that, but I do think the bones add flavor.  So does the coffee.  It makes the sauce deeper and richer.

Barbecue sauce in the slow cooker can get thin, so I thickened it a bit with cornstarch.  We had no leftovers with this meal!

Chicken BBQ & Slaw Sandwich – 75 Days of Summer Slow Cooker Recipes

BBQ in the slow cooker is a staple.  It doesn’t get much easier than this.  Kim from Makin’ it Mo’ Betta spins this classic southern, with the addition of a simple slaw to top the sandwiches.  If you’ve never tried slaw on your barbecue sandwich, please do!  It’s the perfect kind of crunch and flavor to top the meat.

Kim suggests a few brands of vinegar type bbq sauce for the meat.  And she has a sugar free version of the slaw too.

Add potato chips and watermelon (maybe make the watermelon wild?) and you’ve got the makings of an easy summer supper.

Apple BBQ Pork Chops

The inspiration for these came from a Dairy Queen run the other week.  We went for ice cream, but while we were there I noticed a sign advertising apple bbq hamburgers.  I’m not sure what those are like, but it started my mind thinking about the combination of apple and bbq.

I like to keep things simple, so this is what I came up with.  Three ingredients give a sweet, smokey flavor to the pork chops.  You could use the sauce on chicken or burgers too.

And you could choose to grill the meat, cook it in the oven or use the slow cooker.  I chose the oven, only because I ran out of time for the slow cooker and it was way too hot outside to grill (triple digits – whew!).

Hawaiian BBQ Sandwiches (inspired by Earl of Sandwich)

When we were in Disney World a few weeks ago, we had dinner one night at the Earl of Sandwich in Downtown Disney.  My oldest son and I shared a Hawaiian BBQ Sandwich.

Grill recipes for weeknight dinners

I love using grill recipes to get dinner on the table.  It’s quick.  There are no pans to clean.  And it doesn’t heat up the kitchen.

Although I like to grill chicken legs or other cuts of meat with bones, I usually stick with quicker-to-cook foods for our weeknight fare.  I’m a lazy griller.  I like to throw the meat on, walk away to finish the side dishes and come back to flip the meat to the other side.  I know this isn’t the way the experts do it, but it works for getting dinner on the table fast.

(I do have a fantastic BBQ Rib recipe that requires a bit more babysitting.  It is so worth it though!)

One of my favorite time savers is to grill a lot of boneless chicken and store it in the freezer for quick meals.
