Roasting broccoli in the oven gives a new dimension to the flavor. It brings out a nutty taste in the broccoli and enhances the sweetness of the red pepper. You can vary the seasonings using seasoned salt, grill seasoning or lemon pepper, but I chose to go simple with Kosher salt and freshly ground pepper.
Here’s what you’ll need:
Roasted Broccoli and Red Pepper
Ingredients
- fresh broccoli cut into florets
- red bell peppers cut into strips
- olive oil
- Kosher salt
- black pepper
Instructions
- This is more method than recipe. Use the amounts you need for your family.
- Toss the broccoli and red peppers with a drizzle of olive oil. You want the veggies to be lightly coated with oil. It doesn’t take very much oil.
- Sprinkle with seasonings and toss again.
- Place on a rimmed cookie sheet and put it in the oven at 400 degrees for about 15-20 minutes.

living in Texas, the oven doesn’t come on in my house for a good 6 months. I put the broccoli on my gas grill, after tossing it in olive oil, lemon juice, garlic powder, and a touch of ancho chilipowder….it’s the only way I eat broccoli these days!
I love roasting vegetables tossed in olive oil with a little salt and pepper. I’ll take some with honey glazed grilled chicken.
So simple! This will be a great easy side dish.

I really like roasted veggies. I do this with white and sweet potatoes. Olive oil on top and cut up parsley. I will try this with the red peppers. It is colorful and looks like the two flavors will be good together. Thanks.
I love roasted broccoli. I add some thinly sliced garlic and olive oil, put it in my iron skillet and slip it in the oven. Sometimes it is all I have for lunch. I’ll have to try adding pepper. Have a good day and stay cool.
