Cool weather is creeping in on us. It’s time to pull on a sweater and pull out the soup recipes. This potato soup is not fancy or dressed up. It’s comforting, like your favorite sweat shirt. Warm, nourishing, inexpensive, quick and easy. Add hot Cornbread or Graham Muffins and you have a homemade meal in less than 30 minutes.

Chicken Tortilla Soup
This soup smells so delicious. It only takes about 5 minutes to put together, providing you’ve got the chicken already cooked. I like to keep cooked chicken breast in the freezer for recipes like this. I’ve made the soup twice, once on the stove top and once in the slow cooker. Calico Bean Soup with Smoked Sausage in the Crockpot
I usually make this on the stove, cooking it all day, but this time I decided to adapt it to the crockpot. It was just as good in the crockpot, maybe better because it’s easier.
Gather up your ingredients:
Calico Bean Soup with Smoked Sausage in the Crockpot
Ingredients
- 1 lb. smoked sausage – I use turkey because I don’t like all the grease of the regular kind
- 1 lb. mixed dry beans
- 1 onion chopped
- 1 clove garlic minced
- 1 can diced tomatoes undrained (I thought it would have been good with a second can)
- 1 qt. chicken broth
- 2 cups water
- salt
Instructions
- Prepare the beans by rinsing them and picking through them to remove any little stones.
- Soak them overnight or do a quick soak by covering them with boiling water for and hour or two. Drain them and put them in the crockpot.
- Chop the onion, garlic and sausage and add to the crockpot along with the other ingredients.
- Pop the lid on and cook on high, at least 5-6 hours. I don’t think you could overcook these.
- I serve the soup over brown rice. It’s also good with cornbread.

This recipe always reminds me of a cat we used to have named Harley Davidson (he had a very loud purr). He didn’t usually eat people food, but he loved the “gravy” part of this soup. RIP, Harley. You were a good cat.
Hamburger Vegetable Soup
Homemade soup is so much better than canned. This one is easy. It makes a big pot, so you can freeze the extra for another meal. I’ve got leftovers of this going into the crockpot for our dinner tonight. Cooking once and eating twice is always nice!
Gather up your ingredients:
I modified this recipe a bit from the way my mom gave it to me. I thought the modified version tasted better, but I’ll give you the original ingredient list too.
Hamburger Vegetable Soup
Ingredients
- 2 – 2 1/2 lbs. hamburger
- 1 onion chopped
- 1 green pepper chopped
- 1 can beef broth I used 2 to make it richer
- 1 can diced tomatoes undrained
- 1 can tomato sauce
- 2-3 cans Veg-All drained (I used 2 cans undrained)
- 1/2 cup or more of barley or rice
- 1/2 cup or a big squirt of ketchup
- 8 cups water I only used 5 since I added a can of beef broth and didn’t drain the veggies
Instructions
- Brown the hamburger, onion and green pepper together.
- Drain and rinse under hot water to remove the grease.
- Put back in a large soup pot and add all the other ingredients.
- Bring it to a boil and let it cook a few minutes or simmer it for a few hours.
I served it with Cheddar Muffins.

Two of my four kids have the flu. Flu A, whatever that is. All I know is that it lasts 7-10 days and I don’t want it! Enter this recipe for Virus Killing Soup, which was shared on the Sonlight Forums by Chloe.
The soup tastes fantastic. It really should have a different name, because Virus Killing isn’t real appetizing. However, that is the point of the soup so we’ll go with it.
