Cool weather is creeping in on us. It’s time to pull on a sweater and pull out the soup recipes. This potato soup is not fancy or dressed up. It’s comforting, like your favorite sweat shirt. Warm, nourishing, inexpensive, quick and easy. Add hot Cornbread or Graham Muffins and you have a homemade meal in less than 30 minutes.
The ingredient list is short:
- potatoes, peeled and diced
- butter
- salt
- milk
I don’t measure any of this. Make a lot or a little. Grab a pan that will hold the amount of soup to feed your family. Dice up the potatoes and add them to the pot until you have the pot about half full or so with potatoes. Sprinkle salt over them, add a bit of butter and fill the pot with water. Boil until very tender.
Drain the potatoes. Mash some of them up with the back of a spoon as you’re stirring in more butter and salt. Pour in milk, enough to make it a soup. Heat through. Add more salt to taste and pepper. Serve with shredded cheddar cheese, if you like.

Potato soup is one of our favorites. We had potato soup with corn bread Wednesday night for supper. It’s always a hit.
I mix a few tablespoons of flour in with a little milk and add to the mixture after it’s cooked a little while, just to thicken it up a bit.
And of course good shredded cheese on the top makes it even better….

I first brown pieces of bacon, then add onions, potatoes, and sometimes carrots cut up in small pieces. Is very delicious. I love potato soup and it is a good way to warm up your family on a cold day.
Can this soup be made with 2% milk?

I was just wondering how you think the soup would turn out with soy milk, I need to use a dairy alternative.
Do you have to mash up the potatoes? I like them in little pieces so you can taste them.
You don’t have to mash them. I usually mash part of them so it thickens the soup, but I leave some unmashed.
This is my second time making potato soup, the first beingnin a crock pot. My client wanted some homemade potato soup so I brought some good ole Walmart bought headset bag russet potatoes(3lb bag $2.26) to work with me and forgot my electric pressure cooker that I had originally planned on as my heating element.
Found a big pot and did my thang with this awesome recipe.
Mine variates by adding just two thumb tiny thumb pinches of celery salt and pepper, quarter of an onion diced next to fine, Added a little #Velveeta shredded cheddar and #GreatValueRealBaconPiecesSodiumReduced.
So very good and cooked up in less than an hour.
My client said at 76yrs of age that without a doubt this was the best potatoe soup she had ever had, and boy has she tried plenty.

Instead of using flour to thicken it, could we use instant mash potatoes?
That would work. I don’t usually add flour to this soup, I just mash up some of the potatoes and that helps to thicken the soup a bit.
I MAKE POTATO SOUP ALOT FOR THE FALL AND WINTER MONTHS. I ALSO ADD CELERY,ONIONS AND I HAVE NEVER TRIED ADDING CHEESE BUT I AM GOING TO NEXT TIME I MAKE THIS SOUP THANKS FOR THE IDEA.
