The other day while I was thinking about Disney World, I started looking through recipes on AllEars.Net. Deb has an excellent collection of recipes for foods that are served in various WDW restaurants. I made note of several that I want to try, including this meatloaf which is served at the 50s Prime Time Cafe in Disney’s Hollywood Studios. The meatloaf was easy to make, flavorful and moist. As a bonus, it made so much I turned it into two loaves and froze one for another time.

Cucumbers and Onions
It’s hot outside. Want something cool and crunchy with lunch or dinner? Here you go.
I wish I had cucumbers from the garden for this, but my cucumber plant is pitiful. It got hit hard by a late frost and just can’t seem to grow at all, let alone produce cucumbers. Luckily, I can still find good cukes at the farmers market or plain ol’ Walmart.
Creamy Tortellini with Red Bell Peppers and Peas
I know I’ve declared my love for pasta many times, but let me say it once more – I really love pasta! I bought the totellini with the intention of re-creating a pasta dish at Fazoli’s. I’ve never eaten that dish, but the picture in the ad looked good and involved artichoke hearts and sun-dried tomatoes. Yum. For some reason, I could not find artichoke hearts in Walmart the other day and I forgot to buy sun-dried tomatoes. I did have red peppers and peas though, so I created this instead. A very good combination of flavors in a creamy, cheesy dish.

Baked Chicken with Summer Vegetables in the Crockpot
I adapted this recipe for the crockpot by making just a few changes in it. The original recipe comes from Country Gourmet Cookbook. The instructions weren’t really complicated but there were several steps that involved baking the chicken skin-side down for a while, then flipping it, deglazing the pan… I cut out all of that by using the crockpot. The results were delicious and much easier than the original. The only thing lost was that the chicken didn’t really brown as it would in the oven.

Garlic Chicken with More Garlic in the Crockpot
I love garlic, so when I saw this recipe over at A Year of Crockpotting, I had to try it. It did not disappoint. The garlic takes on a nutty, roasted flavor and the seasoning on the chicken compliments the other flavors. I served the garlic and onions over angel hair pasta. I’m pretty sure this was the fanciest chicken leg meal I’ve ever eaten.
