It’s hot outside. Want something cool and crunchy with lunch or dinner? Here you go.
I wish I had cucumbers from the garden for this, but my cucumber plant is pitiful. It got hit hard by a late frost and just can’t seem to grow at all, let alone produce cucumbers. Luckily, I can still find good cukes at the farmers market or plain ol’ Walmart.
Here’s what you’ll need:
Cucumbers and Onions
Ingredients
- cucumbers peeled and sliced
- onion peeled and sliced
- 1 cup sugar
- 1/2 cup vinegar
Instructions
- Mix up the sugar and vinegar and pour it over the cucumbers and onions.
- That’s it. You can make more “juice” if you need to. Just use twice as much sugar as vinegar.
I really like this with sandwiches, especially egg salad sandwiches. It’s good and it makes me think of the children’s book Bread and Jam for Francis. If you’ve never read that book, you should. You’ll learn how badger parents are the smartest parents of all. Grab a copy, turn on the fan and read it with the closest child.

A friend gave me about six wonderful cukes from her garden yesterday. I sliced some very thin in a sandwich with lunch meat last night. We were working on a hard project all day yesterday. It really depends on how many cucumbers you use. There will be enough vinegar mix for 6-10 cucumbers. If you use 6 small-medium cukes, that should feed about 8 people.

We always cover the cucumbers and onions with the vinegar and sugar mix. Seal it in container and refrigerate for a day or two-until the vegetables soften and the flavors blend. Simply Wonderful!!!

It lasts quite a few days, maybe a week in the fridge. And if you have extra liquid, you can chop more onions and cucumbers into it.
