More-with-Less is one of my favorite cookbooks. It’s full of simple, delicious and economical recipes and this casserole is one of them. This is a perfect recipe to use chicken that you’ve already cooked and frozen. Once the chicken is cooked the dish is a snap to put together. [Read more…] about Mandarin Chicken Rice Bake

Southern-Asian Fusion Dip
By “Southern”, I mean south of the Mason-Dixon Line, not southern Asia. By “Fusion”, I mean let’s mix some soy sauce with some mayo.
This stuff is good and slightly addictive the way dip is supposed to be. I adapted the recipe from Polynesian Dip, which I found on Tasty Kitchen. Bacon and Tomato Pasta
I cooked up a bunch of bacon the other night, intending to put it all back in the freezer for another time. My youngest son was begging to eat it for dinner though. Beef Bourguignonne
Is there a food blogger out there who has seen the movie Julie and Julia who has not felt a burning desire to whip up a pot of Beef Bourguignonne? And no wonder! This was amazing!
It made me very happy to see that this is the recipe for the last Beef. It’s What’s for Dinner challenge. The recipe the NCBA shared with us can be found here. I combined several recipes in cooking up my version. Ever since seeing the movie, Julie and Julia, I’d wanted to adapt this recipe for the crockpot. Stephanie O’dea beat me to it on her blog, A Year of Crockpotting. I thought about using the slow cooker anyway, but ran out of time today to do it.
Bowtie Festival
I was going for a copy cat version of Johnny Carino’s Bowtie Festival when I created this. Several months ago, I created Penne Gorgonzola, which came very close to the restaurant dish. This Bowtie Festival was excellent, but it was not exactly like the restaurant version. Something was missing, but we couldn’t quite place it. That said, I will make it again. How can you go wrong with pasta, parmesan and bacon? Wonderful stuff. [Read more…] about Bowtie Festival
