bacon and tomato pasta done

I cooked up a bunch of bacon the other night, intending to put it all back in the freezer for another time.  My youngest son was begging to eat it for dinner though.  Since I wasn’t in the mood for breakfast for dinner, I decided to add it to a pasta dish.  We ate every last bit of this.  There were no leftovers at all.  I guess they liked it 🙂

Here’s what you’ll need:

Bacon and Tomato Pasta

Ingredients

  • 1 lb. pasta – I used penne but you could use any shape you like
  • 2 Tbs. butter + 2 Tbs. olive oil this didn’t make it into the picture
  • onion finely chopped
  • 2 cloves garlic minced
  • 1/2 cup white wine
  • 1 1/2 cups half & half
  • 1 1/2 cups parmesan cheese shredded or grated
  • salt & pepper
  • bacon cooked and diced
  • 1 can diced tomatoes drained
  • fresh basil leaves chopped

Instructions

  • Boil the pasta according to the directions.
  • Melt the butter and olive oil together in a pan and add the onion and garlic. Cook until the onion is tender.
  • Add the wine and cook for a minute or two.
  • Add the half & half, whisking to blend. Stir in the cheese and let it melt.
  • Season with salt and pepper.
  • Toss in the bacon, tomatoes and basil.
  • Drain the pasta then mix it with the sauce.
  • Serve it with extra parmesan and black pepper if you like. Yum!

  • This didn’t work for me at all. When I added the 1/2 and 1/2 it curdled and was a gross looking mess. Had to throw it away 🙁

  • OMG wish i could rate this with stars because it was AMAZING!!!! My husband and i cooked it together and even tho i accidentally grabbed Kraft Parmesan cheese instead of fresh, it did not ruin it at all. There is nothing i would change about this dish, this is a KEEPER FOREVER!

  • I made this last night for dinner, it was awful but not the recipes fault. I didn’t no what half and half was so added 11/2 cups of each. It was like soup nothing stuck to the pasta. Maybe I should try again, but Ive been put off lol..Thanks Brenda

  • I made this for dinner tonight. My family loved it! My husband actually told me, “Move this away from me before I eat all of it!” It was surprisingly light but perfect for a rainy Florida evening.

    The flavors of were really good together but there were a couple of things that I might change then next time I make this. The first change would be to sprinkle a little bit of flour (a tablespoon or less) over the onions and garlic and cook that for a minute or so before deglazing with the wine. It would thicken the sauce up just a little bit. The second change I would make is to add the cheese just before serving instead of adding it to the pan and letting it melt. I grated fresh parmesan into the pan and melted it but it ended up a congealed mess in the bottom of the pan.

    There are so many possibilities with this dish! Will definitely try it again!!

    • I also had the trouble of congealed cheese mess, hubby had to clean the dish for me as I couldn’t move it. It was like glue, I also had a runny mess..I’m glad im not the only one with problems.

  • Love this recipe. I’ve made it several times for my family and tonight am making it for my parents who are visiting from England. 🙂

    I use apple juice when we don’t have wine at home.

  • Certainly a keeper for our home! I substituted chicken stock for the wine and used milk and cream instead of 1/2 & 1/2 because that’s what I had to use up. It turned out wonderful!

  • i was going to also ask if i can leave out the wine. they dont sell it at the commissary and we are too lazy to go to another store lol. i will use chick broth then.

  • That was to DIE for! My family has declared it a keeper. I made it with whole cream instead of 1/2 & 1/2 since that’s what happened to be in the fridge, and it was truly divine. Well done!

  • This looks so yummy! I think I might be the only one around here who would eat it though – husband doesn’t like tomatoes and daughter is just starting to eat table foods and is not a fan of pasta so far. We never have wine in the house – do you think it would be as good if I just left that out?

    • Angela, You could leave out the wine. It would change the flavor a bit, but it would still be good. You could also substitute chicken broth if you want.

  • This is exactly like the 3 cheese chicken penne pasta Applebees has…..but with bacon instead of chicken! I loved this and so did my very picky dh and 8 year old!
