I have to tell you a little story. I’ve been working so hard on my cookbook and have created so many recipes that I really wondered if I’d ever be able to create another one.

What if I’d poured everything I had into that book and there was nothing left to work with?

Instant Pot Chicken Recipes for the Freezer

In the past several weeks we’ve enjoyed a series on how to cook meats and proteins for the freezer in the Instant Pot. We started with Turkey, followed by Beef and Beans. Last week we focused on Pork and this week we’ll wrap up our series with Instant Pot chicken recipes for the freezer.

Several of you have joined us for the facebook live posts as we’ve cooked each of these in the Instant Pot and talked about ways to serve each meat. Your comments and ideas have made this series even more fun to do together and hopefully, you have been inspired to prep meats and proteins for your own freezer.

And now, let’s make some Instant Pot Chicken Recipes!

Making a whole chicken is easy. Take it out of the packaging. There may be some parts in the cavity – heart, liver etc. These could be in a bag or loose. Either way, remove them from the cavity of the chicken.

Place the chicken in the Instant Pot or pressure cooker. Season with salt and pepper and add at least 2 cups of water to the pot. Set the cook time for 25-30 minutes.

When the cook time is finished, do a quick pressure release and the chicken is ready to use. I like to shred or chop the meat and store in freezer bags in the freezer so I’m a step ahead on Instant Pot Chicken Recipes. And the step that’s done is the biggest and most time-consuming for most of these recipes.

Instant Pot Chicken Fajitas (with a slow cooker option)

These Instant Pot Chicken Fajitas are destined to be just as popular as the slow cooker version, which have been a favorite in my kitchen and in the kitchens of thousands of Eat at Home readers.

They couldn’t be easier to make. The Instant Pot version starts with still frozen chicken, adds onions and bell peppers along with a can of diced tomatoes with green chilies. Not needing to thaw the chicken first makes these super simple to make and it means you don’t have to plan ahead for dinner.

With just 5 minutes of hands-on time to get these in the Instant Pot and only 12 minutes of cooking time (plus a few minutes for the pot to come to pressure), this recipe is a perfect weeknight dinner.

We usually wrap the chicken fajita filling in soft taco shells, adding cheese, sour cream and other fixings. But it also makes great nachos. Or try serving it over rice.

Using the Instant Pot makes the whole process quick. You can have the entire meal done in about 30 minutes and that includes putting the ingredients in the pot, allowing time for it to come to pressure and to cook.

If you prefer less juice in your fajita meat, then you can use a mesh strainer when cooking your fajita meat. Check out my 10 Best Instant Pot Accessories post for information about that and other great tools to use with your Instapot.

Instant Pot Chicken Fajitas (with a slow cooker option)

Servings: -8 servings

Ingredients

2 lbs. frozen boneless chicken tenders
3 Peppers Green, Red, and Yellow, sliced
1 Onion sliced
1 can Red Gold Petite Diced Tomatoes with Green Chilies
1 Package of Taco Seasoning
Flour or corn tortillas
Toppings – sour cream cheese, guacamole, etc.

Instructions

Put frozen chicken tenders in pot.
Add peppers and onions and pour tomatoes over the top.
Sprinkle taco seasoning over everything.
Seal the lid and set the cook time to 12 minutes. Do a quick pressure release.
Serve in tortillas with toppings.

Chicken Salad with Chick Peas – easy lunch or dinner

Hellmann’s Mayonnaise recently contacted me asking if I’d like to try their new Organic Mayonnaise. I gave a quick yes! Hellmann’s is my favorite mayo and this one is really good.

I decided to try it in a chicken salad. This recipe is a little different than most chicken salads and it’s really good. The dressing is creamy and flavorful, despite the simple ingredients. Red onion lends a punch of flavor and cucumbers add crispness. The chick peas and chicken are a surprisingly good combo.

For this recipe, I used chicken I’d cooked in the Instant Pot. More on that another time, but I will say that’s a great way to cook a bunch of chicken. I used part of the chicken for this recipe and froze enough for two more meals.

Here’s what you’ll need to make Chicken Salad with Chick Peas:

The ingredient list is very simple. The salad comes together quickly and is very healthy too. It would make a great packed lunch or easy dinner.

Chicken Salad with Chick Peas

Servings: -8 servings

Ingredients

4 cups shredded cooked chicken breast
2-15 oz cans chick peas rinsed and drained
2 cups thinly sliced seedless cucumber
2/3 cup mayonnaise
2 tsp. dried mint
½ cup finely chopped red onion
2 Tbsp. fresh lemon juice
5 cups loosely packed baby spinach leaves
crumbled feta optional

Instructions

Combine chicken, chick peas, cucumber, feta, mayonnaise, mint, onion and lemon juice in
large bowl.
Serve over fresh spinach.
Top with crumbled feta, if desired.
