I know it’s Monday and that usually means a new menu with grocery list. But today I’ve got something different for you and it includes a really cool giveaway!
Recently, I Can’t Believe It’s Not Butter! contacted me, asking if I wanted to participate in their Holiday Bake-Off. Did I mention that it takes place in New York City this Friday?
I will join 9 other bloggers to take part in a friendly competition at the Unilever Test Kitchens. The fun starts today with a giveaway of baking equipment! But first, my recipe for Cranberry Muffins with Orange Marmalade Glaze.
Cranberries are a perfect ingredient for holiday food. The muffins are sweet, but the tart taste of the cranberries along with the citrus make them taste bright, like sunshine sparkling over snow on a winter morning. They’d be a wonderful addition to Christmas breakfast or brunch, but they are so simple to make they can brighten a plain old Tuesday morning too.
Here’s what you’ll need:
Cranberry Muffins with Orange Marmalade Glaze
- 2 cups flour
- 1/2 tsp. salt
- 1 Tbs. baking powder
- 1 stick I Can’t Believe It’s Not Butter!, softened
- 3/4 cup sugar
- 2 eggs
- 3/4 cup milk
- 1 tsp. vanilla
- 1 cup coarsely chopped cranberries
- 1/2 cup orange marmalade
Stir the flour, salt and baking powder in a large bowl.
With an electric mixer, cream the I Can’t Believe It’s Not Butter! and sugar. Add the eggs, vanilla and milk and mix until well blended.
Stir wet ingredients into dry ingredients with a spoon. Stir gently, just until combined. Fold in the cranberries.
Fill greased muffin pan with the batter and bake at 400 degrees for 15-20 minutes.
Melt orange marmalade in the microwave in a small bowl. This will only take 20-30 seconds, depending on the power of the microwave. You don’t want to make it too hot, just melted. Dunk the top of each muffin in the marmalade to coat it with the glaze.

My favorite cranberry recipe is honestly jellied cranberry sauce!:) pour it out of the can at thanksgiving!
A favorite cranberry recipe here is Apple Rosemary Couscous:
2 T. olive oil
¾ c. chopped onion
3 cloves garlic, minced
1 13.75 oz can chicken broth
1 t. dried rosemary
¼ t. black pepper
1 c. plain couscous
1/3 c. dried cranberries
2 medium tart red apples, cut into ½ inch pieces, unpeeled
In a large saucepan, heat olive oil over medium-high heat. Add onion and garlic; cook 2 or 3 minutes, stirring constantly or until onion is translucent.
Add broth, rosemary and pepper; bring to a boil Reduce heat to medium and cook 5 minutes. Stir in couscous and cranberries; cover and remove from heat. Let stand 5 minutes. Fluff couscous lightly with a fork. Gently stir in apples. Cover and let stand 3 minutes.

Oh wow, these muffins look delicious. My favorite cranberry recipe(other than, cranberry sauce, which is a given!)…is White Chocolate Cranberry cookies, they are a delicious combo of tangy, sweet and almost a little salty. They are a must have every Christmas in my house!

Cranberry & clove pork loin in the crockpot – family fav
My favorite cranberry recipe is:
“Orange Cranberry Relish”
1 pound (4 cups) cranberries
2 oranges
2 cups sugar
Put cranberries through food processor (I use my Vita Mix blender as I don’t have a food processor). Peel oranges, remove seeds and put rind and oranges through chopper. Mix with cranberries and sugar. Let stand for a few hours before serving. Nice, fresh alternative to cooked cranberry sauce!
I love cranberry sauce. It’s better than gravy on my turkey every Thanksgiving.

At a potluck dinner, I once had a cranberry gelatin salad made with fruit, nuts and probably lots of sugar… I wish I had the recipe, because it was really yummy!

My favorite way to use cranberries is in a Pecan, White Chocolate & Cranberry Tart recipe I found in one of those little Pillsbury booklets by the check-out stand of the grocery store. I make it for Thanksgiving and Christmas every year and it is really delicious. Even non-cranberry lovers now ask for this dessert. A little tart, a little sweet, a lot of YUM!

My favorite cranberry recipe is my grandmother’s recipe for a frozen whipped cream concoction that she fixed every Thanksgiving and Christmas. I have never seen it in a recipe book and I don’t know where she got it but it was a tradition at her holiday dinners.

My favorite cranberry recipe is definitely my frosting:
6 tbspoons of butter, 1.5 cup powdered sugar, 2 tbs of milk, 5 tablespoons of white chocolate chips, and 4 tablespoons of cranbrerries..
Cranberry Tart
Ingredients:
2 cups cranberries, chopped
½ cup chopped walnuts
1 ½ cups sugar, divided
1 cup flour
¼ teaspoon salt
¾ cup butter, melted
2 eggs, lightly beaten
1 teaspoon grated orange zest
¼ teaspoon orange extract, optional
Powdered sugar, for serving
Directions:
1) Preheat oven to 350°F. Lightly grease a 10-inch springform pan.
2) Combine cranberries, walnuts, and ½ cup sugar in a large bowl; mix well. Spread evenly among bottom of prepared pan.
3) Combine remaining 1 cup sugar, flour, and salt in a large bowl; whisk well. Stir in butter, eggs, zest, and extract; mix well. Pour over cranberry mixture.
4) Place springform pan on a deep baking sheet; bake 40 to 45 minutes, until set and lightly golden. Cool pan on a wire rack, dust with powdered sugar, and serve.

I “liked” your fb page, and subscribed to your blog (just waitin’ on the activation email to arrive)…I’ve been lurking for a while and finally subscribed. 🙂 I like cranberries just about anyway you can fix them, we even like the canned whole berry and yep even the jellied cranberry sauce. But I love a fresh cranberry relish. I have a recipe for some really yummy bars that have white chocolate chips and craisins. And I make a pumpkin cranberry bread that is really good. These muffins look really good and they are definitely going on my to make list along with a cranberry bread recipe that I have saved to make from the Tasty Kitchen site. My favorite cranberry recipe is cranberry bread. My neighbor used to make it every year and I loved it. But since then, I haven’t eaten it for a really long time, I’m starting to miss it.
My favorite cranberry recipe is pumpkin cranberry bread from Libby’s pumpkin. You can find the recipe on verybestbaking.com. The orange juice in the recipe combined with the pumpkin and spices really compliments the dried cranberries.

I like to mix 1 can whole berry cranberries with 16 oz. of salsa (drained). Break up the cranberries with a fork & add in the drained salsa. Great with taco chips.

My fave cranberry recipe is my grandmother’s Cranberry-Rhubarb mold. She made it for 40 years then I took over because at age 90 she is entitled to simply enjoy eating and laughing her way through the holidays. 🙂

Cranberry Salsa
1 bag of cranberries
2 granny smith apples peeled
1 red bell pepper
1/2 small red onion
bag of cliantro, pick leaves off
1 jar of pickled jalepenos
Mix all in a food processor
Then add dressing to taste:
3/4 cup of apple juice
1/4 cup of sugar
Sit overnight to chill.
Serve with tortilla chips. Yummy!

My favorite cranberry recipe for the holidays is a homemade cranberry sauce that my mom makes that has pineapple and nuts in it! On a daily basis I give my kids dried cranberries to snack on instead of chips!
