I know it’s Monday and that usually means a new menu with grocery list. But today I’ve got something different for you and it includes a really cool giveaway!
Recently, I Can’t Believe It’s Not Butter! contacted me, asking if I wanted to participate in their Holiday Bake-Off. Did I mention that it takes place in New York City this Friday?
I will join 9 other bloggers to take part in a friendly competition at the Unilever Test Kitchens. The fun starts today with a giveaway of baking equipment! But first, my recipe for Cranberry Muffins with Orange Marmalade Glaze.
Cranberries are a perfect ingredient for holiday food. The muffins are sweet, but the tart taste of the cranberries along with the citrus make them taste bright, like sunshine sparkling over snow on a winter morning. They’d be a wonderful addition to Christmas breakfast or brunch, but they are so simple to make they can brighten a plain old Tuesday morning too.
Here’s what you’ll need:
Cranberry Muffins with Orange Marmalade Glaze
- 2 cups flour
- 1/2 tsp. salt
- 1 Tbs. baking powder
- 1 stick I Can’t Believe It’s Not Butter!, softened
- 3/4 cup sugar
- 2 eggs
- 3/4 cup milk
- 1 tsp. vanilla
- 1 cup coarsely chopped cranberries
- 1/2 cup orange marmalade
Stir the flour, salt and baking powder in a large bowl.
With an electric mixer, cream the I Can’t Believe It’s Not Butter! and sugar. Add the eggs, vanilla and milk and mix until well blended.
Stir wet ingredients into dry ingredients with a spoon. Stir gently, just until combined. Fold in the cranberries.
Fill greased muffin pan with the batter and bake at 400 degrees for 15-20 minutes.
Melt orange marmalade in the microwave in a small bowl. This will only take 20-30 seconds, depending on the power of the microwave. You don’t want to make it too hot, just melted. Dunk the top of each muffin in the marmalade to coat it with the glaze.

A favorite cranberry recipe here is Apple Rosemary Couscous:
2 T. olive oil
¾ c. chopped onion
3 cloves garlic, minced
1 13.75 oz can chicken broth
1 t. dried rosemary
¼ t. black pepper
1 c. plain couscous
1/3 c. dried cranberries
2 medium tart red apples, cut into ½ inch pieces, unpeeled
In a large saucepan, heat olive oil over medium-high heat. Add onion and garlic; cook 2 or 3 minutes, stirring constantly or until onion is translucent.
Add broth, rosemary and pepper; bring to a boil Reduce heat to medium and cook 5 minutes. Stir in couscous and cranberries; cover and remove from heat. Let stand 5 minutes. Fluff couscous lightly with a fork. Gently stir in apples. Cover and let stand 3 minutes.

My favorite cranberry recipe is:
“Orange Cranberry Relish”
1 pound (4 cups) cranberries
2 oranges
2 cups sugar
Put cranberries through food processor (I use my Vita Mix blender as I don’t have a food processor). Peel oranges, remove seeds and put rind and oranges through chopper. Mix with cranberries and sugar. Let stand for a few hours before serving. Nice, fresh alternative to cooked cranberry sauce!

My favorite way to use cranberries is in a Pecan, White Chocolate & Cranberry Tart recipe I found in one of those little Pillsbury booklets by the check-out stand of the grocery store. Cranberry Tart
Ingredients:
2 cups cranberries, chopped
½ cup chopped walnuts
1 ½ cups sugar, divided
1 cup flour
¼ teaspoon salt
¾ cup butter, melted
2 eggs, lightly beaten
1 teaspoon grated orange zest
¼ teaspoon orange extract, optional
Powdered sugar, for serving
Directions:
1) Preheat oven to 350°F. Lightly grease a 10-inch springform pan.
2) Combine cranberries, walnuts, and ½ cup sugar in a large bowl; mix well. Spread evenly among bottom of prepared pan.
3) Combine remaining 1 cup sugar, flour, and salt in a large bowl; whisk well. Stir in butter, eggs, zest, and extract; mix well. Pour over cranberry mixture.
4) Place springform pan on a deep baking sheet; bake 40 to 45 minutes, until set and lightly golden. Cool pan on a wire rack, dust with powdered sugar, and serve.

1 bag of cranberries
2 granny smith apples peeled
1 red bell pepper
1/2 small red onion
bag of cliantro, pick leaves off
1 jar of pickled jalepenos
Mix all in a food processor
Then add dressing to taste:
3/4 cup of apple juice
1/4 cup of sugar
Sit overnight to chill.
Serve with tortilla chips. Yummy!

I haven’t tried it, but I imagine craisin bread would be good too, as opposed to raisin bread… Definitely going to try that now!

My favorite cranberry recipe for the holidays is a homemade cranberry sauce that my mom makes that has pineapple and nuts in it! On a daily basis I give my kids dried cranberries to snack on instead of chips!
