Clearly, I need the book that I’m holding.

I work from home, which in some ways seems like it would make it easy to keep up with daily cleaning tasks.  But what happens is that by the time I drive my daughter to her classes and/or help her get started on school work (she does a hybrid homeschool/cottage school), I need to get started on my own work at the computer.  So the dishes wait.  And the laundry waits.  And unless I set a timer or intentionally take a break to straighten things, all of those chores will be ignored until I quit working at dinner time.  Or quit so that I can take Mia to volleyball practice or some other errand.

I have loved Dana White’s blog, A Slob Comes Clean for years.  I met Dana at a conference quite a few years ago and she is delightful!  Her new book is just as delightful, which is not something you can say very often about a book on cleaning.

I’ve shared before that I often forget about side dishes until it’s nearly too late.  I’m a big fan of keeping the sides simple.

Canned veggies are one of my go-to sides, especially if I’m running short on time, which happens often!

Peas are one of our favorites.  I usually serve them with butter, salt and pepper.  But this time I decided to dress them up a bit.

Lemon Pepper Parmesan Peas (plus a Pyrex giveaway and ideas for dressing up canned vegetables)
Ingredients
  • 15 oz can Libby’s Sweet Peas
  • 1 tsp. lemon pepper seasoning
  • 1 Tbs. shaved Parmesan
Instructions
  1. Heat peas in small bowl in microwave for 1 - 2 minutes.
  2. Sprinkle with lemon pepper seasoning and stir gently to blend.
  3. Top with shaved Parmesan.

Libby’s vegetables make wonderful, quick side dishes.  Here are a few ideas for dressing up the veggies, while keeping things quick and simple:

  • Add herb seasoning to any variety of Libby’s vegetables
  • Sweeten Libby’s Sliced Carrots with a bit of honey.  Add a bit of butter too!
  • Top Libby’s Sliced White Potatoes with bacon bits and shredded cheddar cheese.
  • Add a little salsa to Libby’s Sweet Corn and serve with Mexican food.

There are all kinds of possibilities to make your quick side dishes stand out.

I’ve been working with Libby’s recently and I was so excited to be asked to create a Thanksgiving recipe using their product.  I chose to use Libby’s apricot halves.  Apricots are a favorite of mine.  I used to eat them with breakfast every day. Yum!

This appetizer couldn’t be simpler to make.  It has plenty of fall flavor too.  Apricots and pecans get spiced up with cinnamon, nutmeg and a splash of vanilla.  The warm fruit tops melty brie for an appetizer that your guests will love!  It will definitely keep them happy and willing to wait a bit longer for dinner.

We’ve been having some beautiful autumn weather here.  The cool, sunshine days make me want to get outside for a picnic.

If you get the picnic itch in the fall too, you’re going to love this recipe and the giveaway too!

Smucker’s sent me a picnic basket full of goodies (and they’re going to send one to one of you too!), including jars of some of their jams.  As soon as I saw the orange marmalade I knew I wanted to create a muffin with it.

Gingerbread pairs wonderfully with orange marmalade and the combination tastes like fall.  And muffins are perfect picnic food.  They travel well and don’t require plates or cutlery.  Be sure to pack some cold apple cider to drink with these!

I’m going to be talking about 3 of my favorite things in this post.  Soup.  Sweet potatoes.  And slow cookers.

Make that 4 of my favorite things – how could I forget easy dinners!  When Libby’s asked me to create an easy dinner recipe that cold be repurposed into lunch, I was in.  Our lunches almost always consist of leftovers.  Why cook twice, when you can do it once and have a second meal out of the deal?

This Veggie Chowder comes together really quick.  The other thing I like about it, is that it’s a pantry meal.  You can keep all of these things on hand, so you have the fixings for a fast dinner any time.

Garlic Pepper Chicken and Broccoli with Parmesan Pasta

Broccoli, chicken and pasta.  Any meal I make with these three favorites is going to be a hit in this house.  Luckily, they’re also key ingredients for quick, weeknight meals.

For this recipe, I wanted to keep the flavors simple, but vibrant.  Black pepper is so common, we sometimes forget that it can stand on it’s own.  I didn’t want this to be too peppery for the kids, so I went a little lighter than if it had just been Jim and I eating.

Candy Cane Chocolate Crinkle Cookies

Chocolate Crinkle Cookies are one of my favorite Christmas treats.  This year, I had the idea to roll them in finely crushed candy canes, along with the powdered sugar.

The result is a deeply chocolate cookie with just the perfect hint of peppermint.  Small flecks of red candy cane make them pretty on the cookie plate.

I baked these up using Pampered Chef products for their 2012 Cookie Swap.  I love Pampered Chef.  The products are affordable and made for real people cooking at home.

I have quite a few Pampered Chef products already, but I was happy to try some new ones out.  The adjustable measuring spoons are fantastic.  I didn’t know if I would like them or not, but they’ve already become a favorite.  The cookie scoops are fantastic too.

And one thing really surprised me – the cookie sheet.  I’ve always baked my cookies on a baking stone.  That works great, but this time I used the cookie sheet, lined with parchment paper.  The cookies turned out perfectly.  No sticking.  No burning.  Just sweet perfection.  I’ll definitely be doing that again.

Below, you can see the assembly process for these cookies.  I didn’t roll the dough into balls, but just scooped it into the candy cane powdered sugar and rolled it around.  It made the process much quicker and easier than rolling all those balls.
