If you’ve read this blog very much at all, you know I love pasta. Pasta meals tend to come together quickly, making them perfect for hungry families and this one is no exception. This recipe was shared by DiPaola Momma on her blog, Chicken Nuggets of Wisdom. (Don’t you just love the title of her blog?) I altered it a tiny bit, but didn’t mess with the secret ingredient.

Garlic Chicken with More Garlic in the Crockpot
I love garlic, so when I saw this recipe over at A Year of Crockpotting, I had to try it. It did not disappoint. The garlic takes on a nutty, roasted flavor and the seasoning on the chicken compliments the other flavors. I served the garlic and onions over angel hair pasta. I’m pretty sure this was the fanciest chicken leg meal I’ve ever eaten.

Italian Beef Sandwiches in the Crockpot
Full of flavor with a bit of a kick, these sandwiches are delish! I found the recipe on the blog of one of my readers, Sherri. She has a great recipe blog called Everything in Moderation. My husband, who likes spicy foods loved these, but so did my youngest son who likes things plain. We just didn’t add the peppers to his sandwich and he didn’t use the dipping sauce.
Enchiladas with Chili-Tomato Sauce
The home made Chili-Tomato sauce comes together quickly and makes these enchiladas taste extra special. The ingredients are all inexpensive and things that can be kept on hand. They can easily be vegetarian by not using the ground beef. I pulled the recipe from one of my favorite cookbooks, More with Less.
Barbeque Chicken Fajitas
These make for a super easy weeknight supper. Use your favorite bbq sauce. My kids like the sweet taste of Sweet Baby Ray’s.
