I’ve shared before that I often forget about side dishes until it’s nearly too late. I’m a big fan of keeping the sides simple.
Canned veggies are one of my go-to sides, especially if I’m running short on time, which happens often!
Peas are one of our favorites. I usually serve them with butter, salt and pepper. But this time I decided to dress them up a bit.
Lemon Pepper Parmesan Peas (plus a Pyrex giveaway and ideas for dressing up canned vegetables)
Ingredients
- 15 oz can Libby’s Sweet Peas
- 1 tsp. lemon pepper seasoning
- 1 Tbs. shaved Parmesan
Instructions
- Heat peas in small bowl in microwave for 1 - 2 minutes.
- Sprinkle with lemon pepper seasoning and stir gently to blend.
- Top with shaved Parmesan.
Libby’s vegetables make wonderful, quick side dishes. Here are a few ideas for dressing up the veggies, while keeping things quick and simple:
- Add herb seasoning to any variety of Libby’s vegetables
- Sweeten Libby’s Sliced Carrots with a bit of honey. Add a bit of butter too!

Corn. I roast it in the oven with some sea salt and pepper. Then throw it in a salad. The sweet corn makes it sweet and savory.
Well, I totally turn something healthily into something not so healthy, but it’s so good. I like to cook their green beans in butter and add brown sugar or honey. Delicious!!
Our favorite are actually the peas. I just heat them with a little butter and a little pepper. I could eat them straight out of the can! I love peas!!! 🙂

I like to take a can of green beans and a can of tomatoes and add Italian seasoning, oregano, or rosemary and heat then serve.

Stir fry corn lightly and toss with salt and pepper.
I love Libby’s canned carrots. I heat them in a pan with orange marmalade and a little bit of chipotle peppers. Yummmmm sweet and spicy!
I love carrots with a little butter and a splash of cream after the are heated through. Oh, salt and pepper too! Plain but delicious.
I like french style green beans with a little granulated chicken bullion, touch of sugar, a little salt, a little chopped onion and a potato cut in small chunks.

Green Beans, I put them in the slow cooker with some bacon and garlic and cook all day long. Yummy!
I like to drain a can of corn and heat in a skillet with some cumin, chili powder, a can of green chiles, and some Kosher salt. Yum!
I like to drain carrots and serve with a touch of honey. My kids love it!
My favorite Lobby Vegetable is String Beans. I like to season it with garlic and Parmesan Cheese

Our all time favorite are Libby’s green beans. I add some cooked cut baby new potatoes, butter, salt and pepper and heat gently in the microwave. This is so good, and you have two side dishes in one bowl. Nice!

I like to add a little butter to my pan and sauté some sliced fresh mushrooms for a few minutes then add a drained can of green beans. So yummy!

I use Libby’s canned corn and make a delightful creamed corn with parmesan cheese.
My favorite canned veggie is peas. I sautée some onion or shallot in EVOO. Add some chopped ham and the peas. Salt to taste.
1 can of corn, 1/2 brick cream cheese, packet of cheese from box of mac n cheese plus to taste finely chopped jalepenos. Heat in microwave. Best as dip for white corn chips. Yummmmm
I love the green beans. I chop bacon and cook it. When its done, I add chopped onions and drained green beans and fry them together. Season with salt and pepper.

I love the corn. I think my favorite way to season it is to drain it and saute it in a little bacon grease and then top it with some of the crisp crumbled bacon. It is also delicious in corn chowder made with whole kernal corn, creamed corn, and the canned potatoes.

Peas with mint sauce. The greatest.
Mixed vegetables…the possibilities are endless. I temper the oil with chilli flakes/whole dried chillies and whole cumin seeds, saute the veggies and finish off with a sprinkling of garam masala. At times, I also toss the veggies in a soy sauce, oyster sauce, hot sauce and rice vinegar mixture.

I love the peas! I season them with a little salt, a pinch of sugar, and about a tsp or so of butter. Cook gently til seasonings incorporate.

The peas are my favorite and I would season them with pepper, onions and olive oil.
My very favorite canned veggie is sweet peas and my family prefers it with just butter, but when I am alone I drain them and serve at room temperature with salt, pepper, and feta cheese. It is delish!

1 can of black beans
Salt and pepper to taste
Heat until the corn is slightly blackened

My husband & I love the green beans. I sauté them in a little olive oil & butter, add salt & pepper then use a microplane & great several large garlic cloves into them. They taste wonderful.

My guilty pleasure (as I’ve been baby-stepping to mostly real food made from scratch) is boxed mac n cheese, with a can of tuna and a can of peas added! Oh it’s soo good….
I like all of libbys vegetables. Twice a week I make beef, pork, or chicken vegetable soup. I put a can each of peas, corn, veg all, tomatoes, green beans and potatoes in a pot. Stir in leftover chicken, beef or pork and whatever broth I have on hand add. salt, pepper, dried onions, onion powder, garlic powder and a teaspoon of honey or other sweetener cook on low for 35 min or longer and then I have yummy soup for lunch or breakfast every day

We like the cut green beans that I saute with some butter, sliced fresh mushrooms, some chopped onions and sprinkle with a little salt and a few grinds of fresh ground pepper.

I like to use the canned carrots. I season them with cinnamon, a little nutmeg, butter and honey. However, I usually mash them with a roasted sweet potato and top it with brown sugar, butter, and pecans then bake. Yum

Sweet peas are a favorite in our household. One thing we do is add them to boxed macaroni and cheese. The kids call it mac-n-peas. They love it.
Gotta have sweet peas in our household! My 16 month old just pops them in his mouth like candy and my husband can’t have tuna noodle salad without them!
We love the green beans – heat one regular size can through then drain and add salt, pepper, a little butter and a slice of American cheese! Soooooooo delicious, quick and easy!!

My family loves Libby’s sliced carrots. While heating them on the stovetop, I add a pinch of brown sugar, squeeze of an orange and a bit of zest, and a couple of cloves. So good, my 3 year old granddaughter requests them.

I love most Libby’s veggies. My favorite is green beans. I take two cans, drain one. Put in bowl. Add one can if cream of mushroom soup. Mix up. Incorporate one cup of grated cheddar cheese. Season to taste with garlic, salt and pepper. Heat through. Nom nom nom.
I love the sliced potatoes mixed with the green beans, heated with salt and pepper and sprinkled with chopped, cooked bacon. Don’t put the bacon on early or it will get soggy.
corn i boil it till there is no water i add a little butter and pepper it takes a while and then i add cream cheese and some peppers i love it like this
