This was one of our favorite of the freezer meals I made. It’s very flavorful and cheesy. Assembling the pizzas before baking was quick and easy. I’ll be making this one again. In fact, it might go on vacation with us this summer.
Here’s what you’ll need:
Spicy Garlic Chicken Pizza
Ingredients
- 12 oz boneless skinless chicken breasts or tenders
- 1/4 cup green onions chopped
- 2 cloves garlic minced
- 2 Tbs. vinegar
- 2 Tbs. soy sauce
- 2 Tbs. vegetable oil + 1 Tbs. for cooking chicken
- 1/4 tsp. cayenne pepper
- 1/2 tsp. black pepper
- 1 Tbs. water
- 1 Tbs. cornstarch
- 1 pizza crust
- 1/2 cup grated Monterey Jack cheese
- 1/2 cup grated Mozzarella cheese
Instructions
- Cut the chicken into bite size pieces.
- In a bowl, combine the onions, garlic, vinegar, soy sauce, 2 Tbs. of the oil, and the cayenne and black peppers.
- Add the chicken, stirring to combine.
- Refrigerate for at least 30 minutes.
- Heat the remaining Tbs. of oil in a skillet.
- Drain the chicken and reserve the marinade.
- Add the chicken to the skillet and cook until done, stirring often.
- Add the cornstarch and Tbs. of water to the marinade.
- Pour the marinade mixture into the skillet with the chicken.
- Cook until thickened and bubbly.
- Cool and then freeze in a ziploc bag.
- Combine the cheeses in another ziploc bag and store in the fridge.
- Label with these instructions, “Thaw chicken mixture in the fridge. Spread chicken mixture on the pizza crust. Cover with the cheeses. Bake at 400 degrees for 12-14 minutes.”
I doubled this recipe and we had enough for lunch the next day. Good stuff!

This looks wonderful! I love green onions. I may have to try this out this weekend! I’ve had a lot of BBQ chicken pizza, but never one with soy sauce. My husband would love this.

I logged on to your blog today only to find that I had all the ingredients on hand (minus the pizza crust) for Spicy Garlic Chicken Pizza! I whipped it up in no time and served it on thin crusty Italian bread with salad the side. Delicious! (Just one note: I’ll used less oil next time since it didn’t seem necessary in my non-stick skillet.) Thanks!

This sounds yummy! I’ve got everyrthing but the green onions. I’ve been doing a pantry challenge and only buying dairy and fresh produce so this recipe will work for me! More importantly, what caught my attention was your comment about taking this on vacation. I’m looking for recipes that I can make ahead and bring with us to the beach. Crystal, I put the filling in a ziploc bag in the freezer. I put the cheeses in a ziploc in the fridge. On the label on the chicken I noted where to find the cheese and crusts. That was more for my kids’ sake than mine 😉

Still have not made this… I think I am gonna give it a try next week. It sounds so good! Think I might make one as well for my friend who is having her 5th baby…. she can put it in the freezer as an easy dinner her kids can assemble.

Made two pizzas tonight using the premade thin crusts I bought from Aldi. Was a little leary because have a couple picky eaters when it comes to pizza, but it was a big hit with everyone!
