Slow Cooked Peaches and Cream Oatmeal

Waking up to hot oatmeal is a joy.  And this Peaches and Cream Oatmeal is absolutely scrumptious!  It only takes a few minutes to prep in the evening.  I use my small slow cooker with a cheapo hack to make it programmable.

This recipe makes 4-6 servings.  The leftovers heat up well in the microwave.  It’s thick after being refrigerated, but just add a little milk to thin them down.

Ingredient Spotlight: Peaches

We bought that basket of peaches on our way out of Alabama a few weeks ago.  I intended to make something delicious with them, like a pie or cobbler or ice cream or…  But we ended up snacking on them instead.  Perfectly ripe and juicy and sweet.  Yum!

I did cut one up and eat it over a bowl of vanilla ice cream.  Okay, I did that more than once.

I think I’ll drive back to Alabama for more peaches now.

Peach Crisp in the Slow Cooker

This is the first time I’ve ever made dessert in the slow cooker.  We had a busy night with a soccer game for one child and practice for another child, so dinner was leftover ham sandwiches.  But I did take a few minutes to throw this into the slow cooker.

Warm, cinnamony peach crisp made the quick supper seem special.  The best part is, the ingredients are simple pantry staples.

Peach and Blackberry Pie

Last week my neighbor gave me some fresh blackberries.  There weren’t quite enough for a cobbler or pie, but I had a few peaches too.  I was not sure if this combination would taste good, so I asked for opinions on the Eat at Home Facebook page.  A few thought it was worth trying and a few people voted no on the idea.

Curiosity got the best of me and I decided to try it.  The verdict?  Yum!  You can’t go wrong with fresh summer fruit sweetened and baked into a pie.
