Carrots, Parsnips and Potatoes

carrots, parsnips and potatoes done

Parsnips are a vegetable that I had never eaten until recently.  A few months ago I used some in All Veggie Vegetable Soup.  My friend, Beverly told me that she roasts them in the oven, so I decided to try that too.  They are so good!  The slightly sweet taste pulls me back for a second helping and even third.

Sweet and Sour Meatballs over Rice

A recipe I cut out of a magazine a long time ago, inspired me to create this.  The magazine version used barbecue sauce, but I thought it would taste better with a homemade sweet and sour sauce instead.  The dish is still very easy to make and the kids loved it.  I intended to use a green pepper, but I didn’t have any.  I substituted carrots.  They were very good and it’s one of the veggies my kids like to eat.  [Read more...]

Slow Cooker Beef Vegetable Soup

So, I made up a new soup recipe.  I wanted a beef vegetable soup that I could just throw the ingredients in the crockpot and let it all cook together.  Most of the beef vegetable soups I’ve seen involve cooking the beef first and then adding it to the soup.  I was feeling too lazy for that.  Here’s what I came up with.  Substitute as needed. Pineapple Carrot Bread

My mom used to bake this bread when I was little.  I remember eating it for an afternoon snack and sometimes for breakfast.  It’s a flavorful, moist loaf.  A nice change from banana bread.

Here’s what you’ll need: [Read more...]

Sunday Chicken Dinner in the Slow Cooker

This is one of my go-to meals.  When all else fails, it’s easy to throw chicken, potatoes, carrots and onions in the crockpot and let it do its thing.  A quick pan of cornbread and maybe a steamed green veggie and you’ve got a comforting warm meal with little effort. [Read more...]

Pasta Soup

I’m not really sure what to call this soup.  I made it up one night to go with sandwiches.  I was looking for a minestrone recipe and decided to make up my own.  True confession: I’ve never eaten minestrone and really didn’t know what was in it.  I’m pretty sure this isn’t quite like minestrone, but it is really good.

The ingredients are simple and adaptable to what you have hanging around in your kitchen.  The soup comes together quick too.  Here’s what you’ll need: [Read more...]

Honey Cashew Pork Stir-Fry

I printed this recipe from Meals for You a long time ago.  I altered it a little bit.  Stir-fry is always a hit with my kids, even if it has celery in it (not a favorite of any of them).   The ingredient list is simple and I almost always have all the ingredients, with the exception of cashews.  They are worth adding to the recipe though.  Yum! Cheesy Chicken Chowder

On Thanksgiving Day, we had this soup.  Since we were going to be eating two turkey dinners over that weekend I decided to go a different direction.  Perfect on a cold day, the soup is cheesy and full of chicken and veggies.  I adapted the recipe from an old Southern Living recipe. [Read more...]

Beef Bourguignonne

Is there a food blogger out there who has seen the movie Julie and Julia who has not felt a burning desire to whip up a pot of Beef Bourguignonne? And no wonder!  This was amazing!

It made me very happy to see that this is the recipe for the last Beef. It’s What’s for Dinner challenge.  The recipe the NCBA shared with us can be found here.  I combined several recipes in cooking up my version.  Ever since seeing the movie, Julie and Julia, I’d wanted to adapt this recipe for the crockpot.  Stephanie O’dea beat me to it on her blog, A Year of Crockpotting.  I thought about using the slow cooker anyway, but ran out of time today to do it.
