Lemonade Cake

 

This cake doesn’t look like anything special.  But if you like lemon, you will love it.

It’s one of my very favorite desserts.  My mom has made it for years and I can’t believe I haven’t shared the recipe with you yet.

It starts with a lemon cake mix.  Add a package of lemon pudding mix.  And after it’s baked, drench it with lemonade.

The result is moist, sticky, lemon-packed scrumptiousness!

Lemonade Cake – One of My Favorite Cakes Ever

Ingredients

  • Lemon cake mix
  • Lemon pudding mix 3 oz box
  • 1 stick butter melted
  • 3 eggs
  • 1 1/3 cups milk
  • 6 oz frozen lemonade thawed
  • 1 cup powdered sugar sifted

Instructions

  • In a mixer bowl, blend cake mix, pudding mix, butter, eggs and milk till well blended.
  • Bake at 350 degrees for 40-45 minutes, or until toothpick comes out clean.
  • Stir thawed lemonade and powdered sugar together until smooth.
  • Pour over the baked cake, before removing the cake from the pan and while the cake is still hot. Gently pull cake from edges of the pan so that the lemonade can run down between the cake and pan.
  • Allow cake to cool in the pan for an hour before turning out onto a plate.
  • Cool completely before serving.

Notes

If you can't find a 6 oz can of frozen lemonade, use half of a 12 oz can.

    1. Jenny, any cake you can make in a bundt pan you can also make in an angel food pan or a 13 by 9 cake pan. The times will be on the box.

  1. Tiffany, please let us know what KIND of pudding mix you are talking about in this recipe. I am dying to make it but I don’t know if I should use a box of INSTANT pudding mix or Cook’n Serve pudding mix. HELP! Cake looks sooooo delicious! Please HURRY with an answer! Thanks!

  3. Do I make the frozen lemonade according to can directions and then use 6oz of lemonade/water and the cup of confectioner’s sugar? Or, do I mix 6oz of lemonade concentrate with the confectioner’s sugar?

  4. Made this for Easter, such a hit. The moistest cake I’ve ever had. I added the juice of a fresh lemon to the batter and the glaze (we like tart) Then I lost the recipe and was devasted. Finally found it today and I’m making it again. Love. This. Cake.

  5. Tried this at Easter, it has quickly become our families favorite!! Never thought I’d find something better than chocolate cake.

  6. I have had this cake every year for my birthday for the past 15 years 🙂 One suggestion (and how our recipe calls for it) is to pull out the cake halfway through baking. Poke holes with a toothpick all over the top and pour half the lemonade mixture over the cake. Bake the remaining half time and then pour the other half of the mixture over the fully baked cake. This method creates an AMAZING gooey golden “crust” along the bottom of the pieces 🙂

  7. Added freshly sugared blueberries
    and edible flowers. Everything stuck where I put them because of Lemon aide! As deliscious as it was beautiful.
    Had to make one to try.
    Making one to be auctioned off at our
    once a year blow out!!! A not for profit Club. Camping is a priveledge for the members. This year we have the Screamin’ Daisys’ playing on outdoor stage. I love donating the cakes! This one of yours is an absolute winner!! Ty

  9. I’m interested to try this and want to use my Bundt pan but I’m not really clear on how to do the icing if I’m using the Bundt pan. Should I take the cake out and flip it so the glaze is on the top?
