19 Soups to Warm You Up

by Sacagawea on January 30, 2010

I love soup.  A warm bowl of soup with a slice of good bread or a muffin or biscuit and I’m a happy person.  Here are 19 recipes to choose from.  And I’d love it if you’d leave your favorite recipe in the comments (you can link to your blog, if you like).  That way I’ll have more to try too.

1. Taco SoupA classic.  Easy, lots of pantry ingredients, everybody loves it.  Plus it makes enough for a big meal plus extra to freeze for another meal.

2.  Corn ChowderCreamy and flavorful.

3.  Shaker Village Tomato Soup – Dress up a can of Campbell’s tomato soup.  Pair it with a grilled cheese sandwich made with both cheddar and Swiss cheeses.  Yum!

4.  Crockpot Chicken SoupFor those days when you really only have time to throw a bunch of stuff in the crockpot.

5.  Virus Killing SoupHomemade chicken soup with the power to cure.  And it smells divine while it’s cooking.

6.  Hamburger Vegetable Soup – Easy, delicious and it makes a lot so you can freeze some.

7.  Calico Bean Soup with Smoked SausageHearty, healthy soup made in the slow cooker and served over brown rice.

8. Chicken Tortilla Soup – Super easy and absolutely delicious.

9.  Potato Soup – Humble, comforting and easy.

10.  Baked Potato Soup – Very good with all the flavor of a loaded baked potato.  Plus you get potato skins that can be loaded and stuffed later.

11.  Chicken and Wild Rice Soup – Hearty and creamy.

12.  Cheesy Chicken Chowder – Hearty, creamy and cheesy.

13.  Mel’s Diner Chili – Great chili and a great story.

14.  Pasta Soup – I made it up one night and the kids loved it.

15.  Chicken Posole in the Slow Cooker- A good slow cooker soup and a chance to try out hominy.

16.  All Veggie Vegetable Soup – Throw as many veggies in as you want and eat as much as you can.

17.  Broccoli Soup – Easy and delicious.

18.  Cream of Cauliflower Soup – Similar to the Broccoli Soup, but with the addition of cheese. Milkd and yummy.  Double the recipe if you want leftovers.

19.  Vietnamese Style Chicken Noodle Soup – Easy and everyone seasons their own soup to their own taste.

Don’t forget to leave me your favorite soup recipe!  Stay warm!

I’ve loved every soup I’ve tried that you’ve put out but we keep going back to the chicken tortilla soup. I really think that’s our favorite.

Here is a fast, easy recipe that tastes better each day. I prefer hot Italian sausage. I make this recipe 4 -5 times each winter. Soup is my favorite food.

Italian Sausage Bean Soup
3/4 lb Italian sausage links, casings removed
1/2 cup chopped onion
1 clove garlic, minced
15-1/2 oz can butter beans with liquid
15 oz can black beans, rinsed and drained
14 1/2 oz diced tomatoes with liquid
14 1/2 oz beef broth
1 tsp dried basil
2 Tbs shredded parmesan cheese

1. In a large saucepan, cook sausage, onion and garlic until the sausage is
browned; drain.
2. Add beans, tomatoes, broth and basil. Cover and simmer for 10 minutes.
3. Sprinkle each serving with Parmesan cheese.

I thought I’d share an amazing soup recipe with you in case you like asparagus. I used a lower-fat plain cream cheese with some onion powder or dried onions and some chopped green onions. This soup is so good I made it again the very next day! Enjoy!

(Philadelphia Cream Cheese’s) Creamed Asparagus Soup:
4 Servings Prep/Total Time: 35 min

Ingredients

* 3 Tbsp. butter
* 1 leek, sliced
* 1 large clove garlic, minced
* 1 lb. fresh asparagus spears, each cut crosswise into thirds
* 1 cup chicken broth
* 1 cup water
* 1 tsp. salt
* 1/2 tsp. pepper
* 1/2 cup (1/2 of 8-oz. tub) Philadelphia® Chive & Onion Cream Cheese Spread
* 1/4 cup milk

Directions

* Melt butter in medium saucepan on medium heat. Add leeks; cook 5 min. or until tender, stirring occasionally. Stir in garlic; cook and stir 2 min. Add asparagus, broth and water; stir. Simmer on medium-low heat 5 min. or until asparagus is crisp-tender. Season with salt and pepper.
* Meanwhile, mix cream cheese spread and milk until well blended.
* Add asparagus mixture to blender, in batches; blend until smooth. Spoon into soup bowls.
* Add cream cheese mixture; swirl gently with spoon. Yield: 4 servings.

Special Extra: Garnish with additional asparagus tips just before serving.

Note: Soup is equally delicious served hot or chilled.
