I love to hear from readers. It makes me feel like I’m not standing in the kitchen talking to myself, which I am prone to do from time to time. I hope you’ll take time to leave a comment about your favorite go-to meal. How do you put dinner on the table when all the plans fly out the window?
Meet my “go-to” meal.
Earlier this week, I posted an interview with 5 food bloggers. One of the questions I asked was what their go-to meal is for when all the plans fly out the window. These pancakes are mine. They’re handy when I just don’t feel like cooking. Or when I really need to go to the grocery and have little food in the house. Or when Jim is out of town and it’s just me and the kids for dinner.
Here’s what you’ll need:
- 2 cups whole wheat flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 egg
- 2 cups milk
Stir together the dry ingredients. Add in the egg and milk. Pour onto a hot griddle or skillet that has been sprayed with cooking spray. Cook until the edges are a bit dry and there are bubbles over the surface. Flip and cook a few more minutes. Serve with butter and syrup.
Sometimes I add a bit more milk because I like my pancakes thin. Jim likes his thick, so if he’s cooking he keeps the batter thicker.
Add a glass of milk and some fruit and you’ve got a complete dinner 😉

I totally agree that breakfast items are the best go-to meal if you are in a pinch. I try to schedule in a couple breakfasts for dinner a month and then that is when I make extra batches of waffles or pancakes to freeze. Then, we eat those for breakfast or when we are in a pinch for dinner along with some scrambled eggs. Yummy!

Jessica, that’s funny about the counters. We live in a newer subdivision and lots of people have these counters. I don’t know if I would have picked them myself, but I really like them. I picked the counter tops for our old house and I remember going into a McDonalds bathroom (after our counters were installed) and they had used the same formica for the stall dividers in the bathroom. that was a bit disturbing! 🙂

My go to meal is pancakes, which is why I love this post! I buy bisquick and had no idea that pancakes mix was so simple. I am going to try this recipe out tonight!! Bet it will save me a ton of money!!

Breakfast is a staple “go to” dinner for us. Pancakes, eggs, and fruit….doesn’t get much better than that. I’m gonna try your whole wheat pancake recipe. Looks great!

My go to meal is pancakes !! I LOVE PANCAKES! I’m Italian, so I din’t know this recipe, but reading a lot of blogs, I have found this amazing “food”…now I eat pancakes once a week….twice…… What I have lost for so many years!
I have seen in a shop an istant pancakes mix….I think it’s not useful for me, since this recipes is so easy and fast.
I say…pancakes for breakfast, lunch and dinner !!!!

We say the same thing about our counter tops. We love them, but might not have picked them. We will be keeping them forever since they are granite and expensive!
I had to revise and plan to try to pancakes tomorrow since my doc appointment had me out until past dinner. Uh oh!

Our go-to meal is usually some sort of breakfast as well. Sometimes we will do some sort of eggs, bacon and potatoes and other times it will be pancakes, waffles, or french toast.

I guess I am the rebel – my go to meal is spaghetti. I usually have meat already cooked in the freezer, I use canned sauce that I add lots of veggies to and noodles is something I always have on hand. It is easy peasy lemon squeezy!
