Bread Eggs
Tired of cooking?
Grab a couple slices of bread and a few eggs. Heat the skillet. Add butter. Pull the middles out of the bread and put it all in the hot skillet. Crack the eggs into the holes. Sprinkle with salt and pepper.
South of the Border Skillet
I have to watch myself when I’m putting together a weekly menu, because I have a tendency to put lots of Mexican meals on the list. Potato Soup
Cool weather is creeping in on us. It’s time to pull on a sweater and pull out the soup recipes. This potato soup is not fancy or dressed up. It’s comforting, like your favorite sweat shirt. Many years ago, I was a young newly-wed with no idea how to cook. I wanted to learn though, so I spent hours pouring over cookbooks, copying recipes, watching the Frugal Gourmet on PBS and spending a large percentage of our meager grocery budget to cook one nice meal a week. We would invite friends over, all hungry college students, and have dinner together.
