I have been loving sheet pan dinners. It’s one of my favorite ways to cook, because it’s so easy to incorporate the veggies with the meat and end up with a full meal with minimum effort. That’s my kind of cooking!

I pulled this recipe together one night from ingredients I had in the pantry and fridge. I was after a healthy meal that would make use of what we had on hand. These Chicken and Vegetable Super Grain Bowls did just that!
I happened to have a bag of Super Grains in the pantry that I’d picked up in Walmart once. If you don’t have super grains, use quinoa or rice or any other type grain you like.
We topped the grains with chicken, red peppers, tomatoes, fresh spinach and feta crumbles. The chicken was already cooked and in the freezer, so it just needed a quick thaw in the microwave.
The feta we used was fat free and I wouldn’t recommend that. I accidentally picked up the fat free version instead of regular. It’s okay, but not great. You could easily make this meal dairy free by leaving off the cheese.

We are nearing the end of soccer season and we are worn out. I’ll be the first to admit that I am not a great soccer mom, as far as having a ton of energy and lots of enthusiasm to see every minute of every game. I like watching the kids play, but six games in one week, four of which were on the same day in a city two hours away has taken its toll.
The schedule has also done a number on family dinner and cooking. On Monday Jim took Isaac to his game and the rest of us stayed home. Mia and I didn’t have another hour and a half drive, plus game, plus driving home left in us. She’s been battling bronchitis and a shoulder injury for a couple of weeks and just needed to rest.
We decided to celebrate our night at home with an easy dinner, a fantastic dessert and a dive into Netflix and a good book. We’re both salad fans so we loved the idea of this salad chock full of apples, pecans, cranberries and topped with chicken.
The best part of this salad is the way the chicken is prepped and cooked. The chicken gets slathered in Hellmann’s Mayonnaise, then dredged in seasoned bread crumbs before baking. The process gives the outside a flavorful crunch, while keeping the inside very moist. It’s quick and easy. You can serve the chicken with a few side dishes or slice it thin and serve it on salad as we did.

The first time I heard of Pasta Puttanesca, was in the book Belong to Me by Maria de los Santos. (Fabulous book, by the way.) Something triggered my memory of the dish the other day and I decided to make it.
Oh my! This pasta is full of flavor! Garlic, tomatoes, olives, basil, Parmesan and anchovies all come together in a burst of taste. Please don’t leave because I said anchovies. They add so much flavor and you’ll never even know they’re in there. They disappear when cooked, leaving behind only a wonderful taste. Even your kids won’t know about it if you don’t tell them.
This dish is so quick to make. I pulled it together on a Sunday for lunch after church. It’s ready in the time it takes to boil the pasta.

This recipe for Pressure Cooker Mediterranean Chicken started out as a slow cooker recipe. Then I created it as a skillet recipe.
Now I’ve turned it into a pressure cooker meal. Every version tastes great, so how do you choose which to make? It depends on the time you have available. I know I probably sound like a broken record, but I really want to make this clear.
Even though many pressure cooker recipes call for 15 or less minutes of cook time, it takes much longer than that in total. You have to factor in the time it takes to reach full pressure and to release the pressure.
For a recipe like this one, the total time is about 35-40 minutes. That’s starting with frozen chicken tenders. It’s very convenient and easy to put all the ingredients in the pressure cooker. And once they’re in there, you can do other things while they cook.
If you have 30-40 minutes at home before dinner time, using the pressure cooker is the way to go.
If you have time in the morning to load a slow cooker, but will be coming in ravenous at the end of the day, use a slow cooker.
If you only have 15 or 20 minutes to fix dinner at the end of the day, use the skillet method. Speed that up even more by using rotisserie chicken or cooked chicken from your freezer.
