I have not been good lately about planning my menus. Yes, I plan menus and grocery lists to post here, but I haven’t been planning for myself. Consequently, I wing it a lot. The good thing about winging it is that sometimes I come up with a really good new recipe. That turned out to be the case this time.
The ingredients in my pantry and freezer are what inspired this dish. But as I was putting it together, I realized that it had some similarities to the recipe that Pioneer Woman had posted on her blog that morning. So I guess I was subconsciously inspired by her recipe too. Hers had chicken, whole garlic cloves and tomatoes in common with mine. Oh, and they are both served over pasta. Hers also had wine, which I coveted because it would have been really good in this dish, but I had none.
Here’s what you’ll need:
Mediterranean Chicken in the Slow Cooker
Ingredients
- 3 boneless chicken breasts or more if you like it meatier
- 1 can fire roasted diced tomatoes
- 1 can stewed tomatoes
- 1 6 oz can tomato paste
- 1 onion sliced
- 1 small can sliced black olives
- 1 whole bulb of garlic cloves peeled but left whole (you can use less if you like things less garlicky)
- salt and pepper to taste
- Parmesan cheese if desired
Instructions
- Place the chicken breasts in the bottom of the slow cooker.
- Add the other ingredients on top and stir to combine them a bit.
- Cover and cook on low for 7-8 hours or high for 5-6 hours.
- Serve over angel hair pasta.
- Top with Parmesan cheese if desired.

I’m jealous. When I’m left with a pantry and fridge of spare ingredients, that usually means frozen pizza night for us. This looks great. Mediterranean food is one of my faves.

I love slow cooker recipes and this one sounds so tasty. Crock pots are terrific little appliances. Lots of times when I’m making something that uses spaghetti sauce or tomatoes I pour a little wine into the jar or can, slosh it around and add it to the mixture. It helps clean out the jar and adds a little interest.

I have a question (Im new to the slow cooker!) Should the chicken be thawed or frozen?

Lauren, I’ve done it both ways with boneless chicken breasts. If you start them frozen, just cook them longer.

I have this on my current two week menu, but I didn’t see fire roasted tomatoes at the store. Are they a pretty common thing and the store was weird or do I need to look somewhere special? If I can’t find them anywhere, then tell me what to add to a regular can of diced tomatoes to get a comparable flavor. Pretty please. 🙂

Bethany, fire roasted tomatoes are Hunt’s brand. I don’t think they’re unusual. I’m not sure there’s anything you could add to regular to get that fire roasted taste though. It would be ok just to use plain. It won’t make that huge of a difference.

In the video, you made this with beef correct? If you do it with beef, do you still serve it over pasta?

You can serve it with pasta, rice, couscous… Any of those will work and will be good.
