Fish is such a fast and super easy thing to fix. Often, when I fix tilapia I grill it on the George Foreman grill, but this time I decided to bake it. Three ingredients and about 20 minutes later I had dinner on the table.

These just might be the best cookies I’ve ever made, especially when they are warm out of the oven. Used wisely, they just might get you whatever you want 😉 They are a delicious adaptation of a cookie called My Man’s Cookies from the Vanguards Cookbook my sister-in-law gave me.

In this case, you can learn from me and my stupid cooking flub. Using a flat cooking stone for this recipe will result in butter running into the oven, risk of a fire and a smoke filled house. Grab a pan with an edge to it and you’ll be a happier, safer cook.
Aunt Gerry’s Pineapple Cookies
My Dad is one of 10 children in his family. As the story goes, he was purely spoiled by his older sister, Gerry. She coddled him, carried him and catered to him. And he was ornery. He and his brothers once cut the middle out of a cake she made. They spread icing back over the hole so that no one knew until the cake was cut into.
For some unknown reason, she let him live. Not only that, but she occassionally baked up a batch of his favorite Pineapple Cookies.
Blueberry Upside Down Cake
A perfect summer dessert. The cake is moist and just sweet enough to really showcase the flavor of the blueberries. This is a variation of the Cranberry Upside Down Cake that I made in December.
