The home made Chili-Tomato sauce comes together quickly and makes these enchiladas taste extra special. The ingredients are all inexpensive and things that can be kept on hand. They can easily be vegetarian by not using the ground beef. I pulled the recipe from one of my favorite cookbooks, More with Less.

My Favorite Cheater Meal – Tyson Crockpot Roast

Have you seen these Tyson roasts in the meat section of the grocery? They cost around $12 and they are so worth it. I’ve tried both the beef roast and pork roast and I’ve seen that they sell beef stew, but I haven’t tried that yet.
It takes about 2 minutes to have dinner in the crockpot. Open the meat and put it in the pot. Open the veggies and toss them in on top. Mix the seasoning packet with 1 cup of water and pour it in.
I like to turn the broth into gravy. Put a couple spoons of flour in a container with a tight fitting lid. Add some water and shake the daylights out of it. You want it to be thick, but well combined and pourable. Whisk the thickening into the broth that is still in the crockpot and your gravy is done.
Dinner for the 6 of us for about $2 per person. Faster than fast food and better too. (Use a crockpot liner to speed the cleanup process.)
Southwest Beef Rolls
Don’t you love how in focus that corn is? I am really missing my good camera. If I’d had it I could have focused on the Southwest Beef Roll instead of the corn. *sigh*
Most of the recipes that I share are very easy. This one is too, but it does take a bit more time to put together. It’s worth it though.
4 thin cube steaks (I used 6)
3/4 cup cornbread stuffing mix (I used a bit more than 1 cup of chicken stuffing mix. Cornbread is better though)
1 can stewed tomatoes (I was out, so I substituted diced tomatoes with a few pinches of sugar to tone down the acidity)
1 can diced green chilis
1 Tbs. chili powder
Moisten the stuffing mix with 3 Tbs. hot tap water (4 or so Tbs. if you are making more than 4 steaks). Spread 3 Tbs. stuffing mix over one side of the steaks. Roll up and fasten with a wooden toothpick.
Brown the beef rolls in a large skillet in a bit of oil over medium-high heat.
Add tomatoes, chilies, chili powder and 1/4 cup water. Bring to a boil. Lower the heat and cover the skillet, simmering for 20-30 minutes or until the beef rolls are tender.
Hamburger Vegetable Soup
Homemade soup is so much better than canned. This one is easy. It makes a big pot, so you can freeze the extra for another meal. I’ve got leftovers of this going into the crockpot for our dinner tonight. Cooking once and eating twice is always nice!

I modified this recipe a bit from the way my mom gave it to me. I thought the modified version tasted better, but I’ll give you the original ingredient list too.
Hamburger Vegetable Soup
Ingredients
- 2 – 2 1/2 lbs. hamburger
- 1 onion chopped
- 1 green pepper chopped
- 1 can beef broth I used 2 to make it richer
- 1 can diced tomatoes undrained
- 1 can tomato sauce
- 2-3 cans Veg-All drained (I used 2 cans undrained)
- 1/2 cup or more of barley or rice
- 1/2 cup or a big squirt of ketchup
- 8 cups water I only used 5 since I added a can of beef broth and didn’t drain the veggies
Instructions
- Brown the hamburger, onion and green pepper together.
- Drain and rinse under hot water to remove the grease.
- Put back in a large soup pot and add all the other ingredients.
- Bring it to a boil and let it cook a few minutes or simmer it for a few hours.
I served it with Cheddar Muffins.
