Instant Pot Pumpkin Black Bean Chicken Chili
As soon as the weather cools down, I am ready for all things pumpkin. Desserts, coffee, and yes, my dinner – and this Instant Pot Pumpkin Black Bean Chicken Chili is one of my favorites. It’s like fall in bowl, and perfect to warm you up after a long day of raking leaves!
The pumpkin flavor in this chili isn’t overpowering, so don’t write it off if you’re not a pumpkin fan. It’s really just a great, seasonal vegetable base to build the rest of the flavors off of. Filled with black beans and chicken, this is hearty without being heavy.
The leftovers also reheat well, making Instant Pot Pumpkin and Black Bean Chili a great make-ahead option for lunches through the week too.
We love to serve this with cornbread muffins or hoe cakes on the side. A big salad is a nice addition, too. And if you’re looking for a dessert to pair with this, Pumpkin Pecan Sticky Rolls are just perfect.
If you’d prefer to let this soup cook all day, it can be made as a slow cooker recipe too.
Instant Pot Pumpkin Black Bean Chicken Chili
Ingredients
- 1 onion, chopped
- 1 red or yellow bell pepper, chopped
- 3-4 cloves garlic
- 4 cups chicken broth
- 1 can pumpkin
- 2 cans black beans, rinsed and drained
- 15 oz. can diced tomatoes, with juice
- 2 tsp. parsley flakes
- 2 tsp. chili powder
- 1½ tsp. cumin
- 2-3 cups cooked, chopped chicken
- Shredded cheddar, for serving, optional
- Chopped cilantro, for serving, optional
- Sliced avocado, for serving, optional
Instructions
- Combine all ingredients in the pressure cooker pot.
- Set manual cook time for 20 minutes.
- Let the pressure release naturally for 10 minutes, then release any remaining pressure.
- Serve topped with shredded cheddar, chopped cilantro, and sliced avocado, if desired.
