This is another recipe from Recipe Girl’s cookie list. Hers are Sparkling Butter Toffee Cookies. Mine didn’t come out sparkly, but they are good. I thought these would be a soft cookie, which is what I prefer, but they are a bit crisp. They would be a great choice if you need to mail them.
I did double the recipe and added the whole bag of toffee chips, rather than just 1 cup.
Here’s what you’ll need:
- 2 cup sugar
- 3 sticks butter
- 2 egg
- 2 tsp. vanilla
- 4 cups flour
- 1 Tbs. baking powder
- 1/2 tsp. baking soda
- 1 bag toffee chips
- extra sugar for rolling
Cream the butter and sugar together. Add the eggs and vanilla. In a separate bowl, mix the dry ingredients together. Gradually add to the butter mixture and blend well. Stir in the toffee chips.
Roll the dough into 1″ balls and roll them in sugar. Place the balls on ungreased cookie sheets or a baking stone. Press them down gently with the bottom of a glass that’s been dipped in sugar. Bake at 350 degrees for 9-11 minutes.

You really have to use that chunky white sparkle sugar to get the sparkle effect. The flavor of these, I love though!

Lori, the sparkle sugar would be pretty. And I discovered recently that the walmart brand sugar I always buy isn’t nearly as sparkly as other brands. I’m not sure why, but walmart brand isn’t as pretty.
