Cheese Stuffed Zucchini Boats

Are you being blessed with lots of zucchini in your garden now?  Try something different than zucchini bread.  My husband and I had these for dinner the other night.  They are cheesy and flavorful.  I do admit that my kids ate grilled chicken instead, but they missed out by not trying the zucchini boats.

Pasta Primavera

I love pasta.  I’ve been noticing lately how many recipes I’ve posted that involve pasta.  It’s a lot.  I hope you don’t mind. 

I altered this recipe from one I clipped out of Southern Living many moons ago.  It turns out just a little different each time I make it, depending on the veggies I put in and also which kind of cheese I end up using.  It’s always good.

Lentil Tacos

Lentils cost .98 a bag.  I used about half the bag to make these tacos.  I didn’t calculate the cost of making this recipe, which feeds 6 people, but it is low.  A very rough estimate would be $4.00 total, so about 70 cents a serving.  Not bad for something this healthy and good.

Mexican Vegetables on Cornbread

This is one of the vegetarian recipes that my husband and I enjoy.  I admit that my kids turned down the opportunity to eat it with us and chose frozen burritos instead.  Silly kids.  The recipe is adapted from New Recipes from Moosewood Restaurant.
