Ingredient Spotlight: How to Use Leftover Turkey

If you find yourself with a bunch of leftover turkey next week,  do a jig around you kitchen.  You’re sitting on gold mine of easy, weeknight dinner fare.

Bag the turkey in 3 cup quantities and freeze it (don’t forget to label it).  You can use turkey in any dish that you would normally use cooked chicken.  The possibilities are nearly endless.

Soups and casseroles are obvious choices and I’m going to share a few of my favorite soups with you today.  If you’ve got turkey (or chicken) cooked and frozen, you are all set for these recipes.  [Read more…]

Ingredient Spotlight: Chocolate Chips 2012

I would venture to say that we use 50-75 bags of chocolate chips in our house each year.  At least.

I buy a bag or two each week at the grocery.  Around the holidays, I really stock up.

We love our chocolate chip cookies.  And all other kinds of chocolate too.

My latest chocolate chip find is Hershey’s Baking Melts.  Those are the large, flat chocolates in the photo.  They stay creamy in cookies and give a big burst of chocolate flavor.  If you find them in your store, pick up a bag and try them.  Super yummy!  (Hershey’s doesn’t know me, I’m just sharing a new product I love.)

Here are a few of my favorite recent chocolate chip recipes:  [Read more…]

Ingredient Spotlight: Cranberries 2012

Of all the seasonal foods found at this time of year, I think cranberries look the most holiday-like.  They add so much color and flavor to recipes.

I’ve even seen people decorate with them.  I’m a notoriously negligent and bad decorator, so I have no ideas for you.  Maybe someone will link up something easy and pretty for us.

In just a couple of weeks, I’m going to get to see a cranberry bog and I’m super excited.  Jim and I are heading to Disney World to celebrate our 25th anniversary (2 months early).  The EPCOT  Food & Wine Festival will be going on and as part of that, there is a cranberry bog.  How cool!

Ingredient Spotlight: Pumpkin Recipes 2012

I truly love pumpkin.  I’ve been known to eat a whole pumpkin pie by myself.  And that pumpkin roll, with the cream cheese swirl? Oh my!  I’ve never made one myself because I know how dangerous it could be for me to have it around.

I’ve been looking forward to this spotlight for a while now.  My Pinterest board is ready to go and already loading up with recipes.  I can’t wait to add yours too.

I’ve got a new pumpkin recipe that I’ll share with you on Thursday – Pumpkin Biscoff Monster Cookies.  Here are a few of my other  favorite pumpkin recipes:  [Read more…]

Ingredient Spotlight: Oats 2012

Every week I buy a box of oats at the grocery.  We don’t use a whole box in a week.  At least not usually.  But it’s one of those ingredients that I know we use a lot of.

I don’t want to run out of oats.  It makes the oat breakfast eaters upset.

But because we don’t use a whole box in a week, there’s currently a stash of 6 boxes of oats in the cupboard.  I may have a problem.

I’m an oat hoarder.

But I know as soon as I stop buying oats, we’ll run out.  There won’t be any for breakfast  or a chocolate-craving batch of no-bake cookies.

(And because I’m on a confession roll, I’ll also admit to hoarding chocolate syrup.  Please tell me I’m not alone!)

Thankfully, oats are part of a wide variety of recipes.  Here are some of my favorite ways to use them:  [Read more…]

Ingredient Spotlight: Cake Mix 2012

I’ve been looking forward to this Ingredient Spotlight for a long time.  Cake mix is one of my favorite ingredients.  It can be so much more than what it appears.

Not that we should ever frown on a simple 9×13 cake made according to the back of the box, but there are all kinds of things you can do with a cake mix.

Here are a few of my favorites:  [Read more…]

Ingredient Spotlight: Apples 2012

Can we all agree that apples are one of the best things about fall?

I thought so.

{side note: one of the worst things about fall are all those pictures people pin on pinterest of spiders. why, people? why??}

Apples in dessert is an even better reason to love fall.  Because we’re in the middle of 31 Days of Short Cuts for Cheaters series, I’m linking up recipes that each have a short cut aspect to them.

Skillet Apple Crisp – 20 minutes and done!

Apple Spice Cake with Caramel Glaze – starts with a cake mix, ends with moist apple spice flavor dripping with caramel

Ingredient Spotlight: Frozen Bread and Roll Dough

I almost always have bread and roll dough stashed away in my freezer.  It’s so convenient and versatile.  And there’s nothing like the smell of baking bread in the house.

I love creating recipes using dough I haven’t had to make myself.  I’m such a big cheat.  (If you like to cheat at cooking too, you’re going to love the month of October on EaH.  31 Days series announcement coming up on Saturday.  And yes.  It does involve cheating and cheaters.)

Ingredient Spotlight: Cornmeal 2012

Cornbread is one of my favorite and most frequently made recipes, but it’s not the only thing that can be made with cornmeal.

From breading chicken or fish to dusting the baking stone when making pizza, there are a lot of uses for cornmeal.

Ingredient Spotlight: Peanut Butter 2012

God bless George Washington Carver.

Without him, we probably wouldn’t have peanut butter.  And then, what would become of jelly?  Or chocolate?  Or bread?

Or us?

Over dramatic?  I think not.

I love, love, love peanut butter.
