Chicken Fiesta with Black Beans – a crockpot recipe

You’ll be declared “Best Cook” for making this dish and you’ll love yourself too for how easy it is. It’s a great feeling to have dinner all cooked in the crockpot when you get home after a long day, or just to know it’s finished and you’re free during that time before dinner when little ones get very needy.

Chicken Fiesta with Black Beans – a crockpot recipe

Ingredients

  • 3-4 boneless chicken breasts (I like to use the tenders, as they break apart easily while cooking)
  • 15 oz. corn, drained
  • 15, oz black beans, rinsed and drained
  • 1 Tbs. cumin
  • 1 tsp. chili powder
  • onion, sliced
  • green pepper, sliced
  • 14 oz can diced tomatoes
  • 6 oz tomato paste

Instructions

  1. Combine all the ingredients in the slow cooker and mix well.
  2. Cover and cook on high for 5-6 hours or low for 7-8 hours.
  3. Garnish with cheese and serve over cornbread or in tortillas.

Thanks for coming by my blog today from SITS!

Have you seen the blog of the woman who has been crockpot cooking every day for 2008? I don’t recall her blog address (it’s on my “blog roll”) but she’s the Crockpot Lady.

  4. The Texan in Ohio will love the taste of home with this one! Thanks for finding me! This is an awesome site!

  5. Love your website! Just found you through SITS. I also make a similar “crock pot chicken.” It’s 4-6 FROZEN (yes, frozen) chicken breasts, can corn, can beans, jar salsa. Cook in crockpot 4-6 hours. Turn off crockpot and put a brick of cream cheese on top and let it sit for 30 min. Soooo yummy! Serve with rice, in wraps, with taco shells or nacho chips. The possibilities are endless!

    Great site! I’ll be back.

  6. I fixed this for my family one day this week and they LOVED it! Thanks for sharing such delicious recipes!

  7. In South FL we love these kinds of recipes. They fit our taste buds and our weather when we can use the crock pot. Thank you!!

  8. I already have a similar recipe, only change is I use hamburger, frozen corn, 1 can condensed soup instead of the tomatoes and tomato paste, and 1 cup of rice. A few dashes of hot sauce makes it perfect! Sometimes I slow cook it on the stove and finish it with dab’s of homemade cornbread and cook till the cornbread is finished.

I’ll try your version with chicken!

    Love your site!

  9. Did you use dried, or canned beans for this? I’m guessing canned since you say 15oz. I’d like to do it with dried, but am just starting to use dried beans and wonder if I would have to soak them overnight first, or if that cooking time would be enough for them?

CJ–am guessing you’ve figured out by now that you would need to at least soak them overnight and would need to add some extra liquid to get this to turn out right!

  10. This looks amazing! My family wouldn’t eat this though. They are so picky! No green pepper, no black beans, and no onion. :(

  11. Making this tomorrow! Ilove your website! Thanks!

  12. You are pretty much my go to for the slow cooker Mondays! I linked your recipe to my blog at http://www.samanthaandersenphotography.com/2012/01/soup-caring-dinner-for-4plus-2.html.

    Thank you.

  13. Thank you for making your recipes “Printer Friendly”! :)

  14. I made this meal yesterday! It was great. My left overs will turn into a “chicken spaghetti” meal tonight!

  15. The recipe shows up twice on my screen, but the cooking times are different in each. The first one says cook high for 5-6 hours, low 7-8 hours. The second one says cook on low for 5-6 hours. Can someone help me with the times? I just put mine in the crock on high…
    Can’t wait to try it!
    Thanks!

    • Jamie, go with the cook times for the first one. I’m not sure why it was in there twice. It’s an old post, but one of my favorite recipes. I should update the photo though!

      • Wow, so impressed with the quick response! Thank you so much!! I just found this web site and I can already tell I will be using it A LOT! Merry Christmas :)
