Chicken Fiesta with Black Beans – a crockpot recipe

You’ll be declared “Best Cook” for making this dish and you’ll love yourself too for how easy it is. It’s a great feeling to have dinner all cooked in the crockpot when you get home after a long day, or just to know it’s finished and you’re free during that time before dinner when little ones get very needy.

Chicken Fiesta with Black Beans – a crockpot recipe

Ingredients

  • 3-4 boneless chicken breasts (I like to use the tenders, as they break apart easily while cooking)
  • 15 oz. corn, drained
  • 15, oz black beans, rinsed and drained
  • 1 Tbs. cumin
  • 1 tsp. chili powder
  • onion, sliced
  • green pepper, sliced
  • 14 oz can diced tomatoes
  • 6 oz tomato paste

Instructions

  1. Combine all the ingredients in the slow cooker and mix well.
  2. Cover and cook on high for 5-6 hours or low for 7-8 hours.
  3. Garnish with cheese and serve over cornbread or in tortillas.

    Love your website! Just found you through SITS. I also make a similar “crock pot chicken.” It’s 4-6 FROZEN (yes, frozen) chicken breasts, can corn, can beans, jar salsa. Cook in crockpot 4-6 hours. Turn off crockpot and put a brick of cream cheese on top and let it sit for 30 min. Soooo yummy! Serve with rice, in wraps, with taco shells or nacho chips. The possibilities are endless!

    I already have a similar recipe, only change is I use hamburger, frozen corn, 1 can condensed soup instead of the tomatoes and tomato paste, and 1 cup of rice. A few dashes of hot sauce makes it perfect! Sometimes I slow cook it on the stove and finish it with dab’s of homemade cornbread and cook till the cornbread is finished.

    I’ll try your version with chicken!

    Did you use dried, or canned beans for this? I’m guessing canned since you say 15oz. I’d like to do it with dried, but am just starting to use dried beans and wonder if I would have to soak them overnight first, or if that cooking time would be enough for them?
