When my kids were very small, and there were fewer of them, I used to make this dish often. Somewhere along the line, I forgot about it. A very sad thing, because this pie is healthy, easy and tastes great. The recipe is lightly adapted from the Whole Foods for the Whole Family cookbook.
Here’s what you’ll need:
Veggie Pie
Servings: 6 servings
Ingredients
- 1 1/4 cups whole wheat flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup butter softened
- 1/2 cup plain yogurt
- 2 cups broccoli finely chopped
- 1/2 cup onion diced
- 1 cup shredded cheese cheddar, swiss, etc
- 2 medium tomatoes sliced
- 1/3 cup mayonnaise
- 1 tsp. dried basil or several Tbs. fresh basil
Instructions
- In a large bowl, combine whole wheat flour, baking powder and salt for the crust.
- Cut the butter in and then stir in the yogurt.
- Pat into a buttered pie plate.
- Layer the broccoli, onion, and tomatoes in the crust.
- Sprinkle with the basil.
- Spread the mayo over the top of the veggies.
- Add the cheese to the top of the pie.
- Bake at 450 degrees for 10 minutes.
- Reduce the heat to 350 degrees and bake for 30 minutes.

I’m wondering, Is whole wheat flour a must? Also, can I use Greek yogurt? Sometimes consistency is everything in a recipe. Thanks!
Tiffany says
I’ve never used Greek yogurt with this, but I think it would be great. I’m not so sure about using white flour, but I think that will work too.

I made two of these tonight and will definitely make them again. It wasn’t bad with mayo, but I’m going to experiment without it next time.

I’d like to think of something other than mayo that would still add a little creamy/saucy to it. If you think of something let me know!
Bethany says
I will! 🙂

A can of cream soup and sour cream makes a wonderful sauce. Celery, mushroom etc.

My kids; 12, 11, and 4 gobbled this up. Even the husband. They all had seconds. Thank you so much for all the time you put into this amazing website.

I have been looking for this recipe! I used to make this in the early 90’s when I was a starving student. Can’t wait to make it again!

Yes, Gabrielle! Comfort foods are always a good idea aren’t they!
