Blue Velvet Cupcakes aka KY Wildcat Cupcakes
March Madness is in full frenzy here in the Bluegrass. The Cats won the SEC title yesterday in an awesome game that went into over time, Coach Cal’s face has been put on bottles of Maker’s Mark bourbon and everybody’s doing the John Wall dance. All is right with the world, at least as far as University of KY fans are concerned.

Breakfast Burritos
I completely forgot to take a picture of these before we ate them all. They are slightly adapted from Pioneer Woman’s recipe. She uses homemade potatoes, but I decided to take a short cut and use the O’brien potatoes from the store. I also used Italian sausage, which I’d already cooked and frozen. I couldn’t find any regular sausage in my freezer.

I don’t usually share 3 recipes in one post, but today I just have to. Sunday, I was browsing around Tina’s blog, Mommy’s Kitchen and stumbled on this recipe for Coconut Syrup. I had to make it and knew it would be perfect with chocolate chip waffles. It was.
