This week, I tried to create a new soup for you. I really wanted to make French Onion Soup entirely in the slow cooker. I tried. Unfortunately, it was just shy of a total fail. We ate it. It was okay.
But the onion smell. Oh. My. Word. The onions.
I didn’t think I would ever, ever stop smelling the onions.
Too much. Just too, too much onion.
I’m thinking maybe French Onion Soup is something to be ordered from a restaurant. At least that way you don’t have to smell the onions cooking all day.
I’m testing a new recipe in the slow cooker right now. With any luck, I’ll be sharing Southwest Chicken Chowder with you next Friday.
But today, I have an oldie but a goodie. We love this Chicken Enchilada Soup. It gets made entirely in the slow cooker. No pre-cooking of meat needed. Assembly only cooking is my favorite!

Is ok to let soup cook an hour or two longer in slow cooker??? Asking in case I can’t it home from work in time
