Italian Sausage and Bean Soup


At the end of January I posted 19 Soup Recipes to Warm You Up.  I asked for your favorite recipes and several of you passed on good ones.  This recipe was shared by Connie.  It caught my eye for two reasons. 1) It uses Italian sausage and I have a freezer full of the stuff from my niece’s 4-H project. 2) It’s fast and easy.

The soup was delicious.  I admit to being skeptical when I poured in the can of butter beans.  I wasn’t too sure it looked good and I didn’t think my kids would eat it.  I was wrong.  The soup was wonderful and the kids loved it (except my child who hates all things sausage).  My youngest, very picky son even loved the butter beans.  The wonders never cease. 

Here’s what you’ll need:

  • 3/4 lb. Italian sausage links, casing removed or bulk sausage
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 can butter beans, undrained
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes or fire roasted tomatoes, undrained
  • 1 can beef broth
  • 1 tsp. dried basil
  • shredded Parmesan to top each bowl

In a large pot, cook the sausage, garlic and onion until done.  Drain and rinse under very hot water to remove the extra fat.  Add all the other ingredients except the cheese and simmer for 10 minutes.  Serve in bowls and top with Parmesan cheese.

This will serve 4-6 people.  My family of 6 had no leftovers.

  2. yum! recently I made a soup like this, but with fresh spinach too. my kids actaully really liked it. i was unsure about the white beans as well, but it all came together perfectly.

    i’ll have to make this one too as we are having the coldest winter in a long time here in texas… snowing again!

    this was yummy. thanks for the recipe. I took the lazy route and browned the sausage and then dumped everything in the crock and cooked it on low for 5 hours.

I came across this recipe by doing a web search for Italian sausage and butter beans cause thats what i found between the freezer and the cupboard I didnt have any black beans so I used pinto beans and added a can of corn and some mini rigatoni’s. It was fantastic even my picky kid ate it even tho he picked around the beans lol. Thanks

  9. Where can i find this Italian sausage? Is it just meat like beef were i can just cook it easily over the skillet or do i have to buy it from the deli?

    • It’s ground meat like bulk sausage (as opposed to links). It can be cooked in a skillet to brown it out. You can usually find it in the grocery near the ham or pork.

  10. Having just found this recipe I tried it and loved it! Some tweaks to suit my taste: Since I like a higher liquid to solid ratio in my soups I only used 1/2 pound of sweet Italian bulk sausage. I used only 1/2 can of black beans as I think that is enough for color contrast and just enough black beans for my taste. I was in the mood for this to be a somewhat creamy broth, but not quite too creamy, and I did not want the additional liquid I had in mind to dilute the spiciness. First I added one teaspoon of dried Italian seasoning and 1/8 teaspoon garlic powder. So I after simmering I added about 1 cup of milk, then gently reheated. Really good! As an option
    I would like this served over bow tie pasta OR served with focaccia bread. Dip the bread in the soup or in olive oil! Add a small light Italian salad and this is a great, easy lunch or dinner! Thank you for the recipe.
