Instant Pot Thai Chicken Curry Soup
Instant Pot Thai Chicken Curry Soup is a little vacation for your taste buds. It’s your favorite comfort food – chicken soup – dressed up with the flavors of curry.
The base of this soup is standard chicken soup fare – chicken, onion, carrots, celery, and broth. Curry and coconut milk are the signature Thai flavors in this soup and give it it’s distinct flavors. The soup is made heartier by the addition of rice with cilantro and sriracha to top it off, driving the Thai flavor profile home.
Despite the sriracha, this Instant Pot Thai Chicken Curry Soup isn’t as spicy as you might thin. The soup itself is mild and nourishing. The sriracha is added to taste, so you can make it as spicy or mild as you’d like.
One of my favorite things about this soup is how hands-off it is. It only takes about ten minutes of prep to get this going before you can walk away to do something else.
Instant Pot Thai Chicken Curry Soup is a takeout-worthy dish you can make at home! I love to serve this with naan to soak up the extra broth.

Instant Pot Thai Chicken Curry Soup
Ingredients
- 2 lbs. bone-in chicken
- 1 onion, diced
- 3 carrots, diced
- 3 celery stalks, diced
- 2 Tbsp. curry powder
- 2 - 32 oz. boxes chicken broth
- ½ cup long-grain white rice
- 1 can coconut milk
- Cilantro, chopped, optional, for topping
- Sriracha sauce, optional, for topping
Instructions
- Add first 6 ingredients to the Instant Pot.
- Set manual cook time for 30 minutes. Do a quick pressure release.
- Remove chicken and shred.
- Return chicken to pot along with rice and coconut milk.
- Cook on sauté setting for 20-30 minutes until rice is tender.
- Top with sriracha and cilantro, if desired.
