chip beef gravy update

This is one of those recipes that is so humble it’s a bit embarrassing to post it. But since I found the recipe in an old Frugal Gourmet cookbook, I’ll go ahead. Plus, it is the warmest, creamiest comfort food. Perfect for a cold winter day.

Chipped Beef Gravy over Cornbread

Servings: 2 -4 servings

Ingredients

  • 3 Tbs. butter
  • 3 Tbs. chopped onion
  • 3 Tbs. flour
  • 2 cups hot milk
  • 1 jar of beef you know the kind from the canned meat section that you use for cheese balls
  • 1/4 tsp paprika
  • pepper and salt to taste

Instructions

  • Rinse the meat under running water to remove a bit of the salt and then chop it up.
  • In a sauce pan melt the butter and saute the onion until it’s clear.
  • Stir in the flour with a whisk and then add the hot milk, stirring until the mixture thickens.
  • Add the remaining ingredients.
  • Serve over Cornbread, Biscuits or toast.

I don’t know what I do but mine ALWAYS crumbles and falls apart. It won’t matter if it falls apart with the beef gravy over it. lol I am going to try this tomorrow night for dinner.   5. We used to eat cream dried beef (this is what we called it) when I was younger!!!! I don’t recall the last time we ate it. Having it with cornbread is “fancier” than when we ate it…just over toast. LOL Talk about humble…thanks for stopping by my blog today.

  7. We called it cream beef on toast and my mom put peas in it. Yummo! This was one of my favorite meals as a kid. Humble, frugal, comfort food at its best.

  8. Gonna add this to my list to try this month, thanks! We’ve ate this but it’s frozen (buy it) on toast. In the last 12 years or so the price has really sky-rocketed so we haven’t ate it in years.

    Round here chipped beef on toast is called something ENTIRELY different. It has a completely non-appetizing nor child-ear-friendly name.

  9. this comment is over a year later but I wanted to tell you we make this alot yet use the small packages of Buddig beef samwich meat. Ya know tha 69 cent ones. Makes it so much more economical!! Like this isn’t already cheap enough LOL. My kids however like it double sauce and half meat we serve over a hearty multi whole grain bread YUM!! I am putting this on my menu again for next week…..Julie

    1. I LOVE your suggestion for using the packaged deli meat! I was thinking “um, don’t think I’ll buy canned beef”, but sandwich meat, now THAT I can do!
