We’ve been having some beautiful autumn weather here. The cool, sunshine days make me want to get outside for a picnic.

Smucker’s sent me a picnic basket full of goodies (and they’re going to send one to one of you too!), including jars of some of their jams. As soon as I saw the orange marmalade I knew I wanted to create a muffin with it.
Gingerbread pairs wonderfully with orange marmalade and the combination tastes like fall. And muffins are perfect picnic food. They travel well and don’t require plates or cutlery. Be sure to pack some cold apple cider to drink with these!
Here’s what you’ll need to make the muffins:
The cinnamon did not make it into that photo. I was out, so I sent my son to go get more, but I snapped the photo while he was gone.
Gingerbread Muffins with Orange Marmalade Filling
Ingredients
- 2 cups flour
- 1/2 tsp. salt
- 1 Tbs. baking powder
- 1 tsp. cinnamon
- 1 tsp. ginger
- 1/4 tsp. ground cloves
- 1 stick butter softened
- 3/4 cup brown sugar
- 2 Tbs. molasses
- 2 eggs
- 3/4 cup milk
- 1 tsp. vanilla
- 1/3 - 1/2 cup orange marmalade
Instructions
- In a large bowl, stir together flour, salt, baking powder and spices.
- With an electric mixer, beat butter and sugar in a separate bowl.
- Add molasses and eggs to mixer and beat well.
- Beat in milk and vanilla until well combined.
- Pour liquid ingredients into dry ingredients, stirring with a spoon to combine.
- Spoon some batter into 12 greased muffin cups. You'll use half the batter for this step.
- Dollop a teaspoon of marmalade onto each muffin.
- Top with remaining batter.
- Bake at 400 degrees for 15 minutes or until a toothpick comes out clean.

Here in Columbus, Ohio, we have the most amazing parks and we love to picnic at one of them- The old Deaf School Park with it’s topiary garden! It has taken a Cezanne painting of a park, complete with park visitors (including a monkey being walked by a lady with a parasol as well a pond with row boat) and made an exact larger than life size replica of every park of it in green topiaries! It is a wonder to see and there are picnic tables dotting the park with our large Midwestern trees to shade us from the sun! It is glorious and beautiful and free to all who visit our beautiful City!

Living in the mountains of western NC, it is really hard to pick just one favorite picnic spot. I have been blessed to live in a place where it’s almost hard to pick a “bad” place to picnic. But of all the places I’ve been since I moved here, I would say a place called Max Patch is one of my favorites. (definitely Google it to see some pics!) It’s just so peaceful and beautiful and you can see forever in every direction. It really feels like you are picnicing on top of the world. I love the simplicity of Max Patch. We have the best picnic spot EVER. The river has a a little rocky beach if you climb down the bank at a certain spot. It’s so quiet because it’s off the main trail so you can just sit with your lunch and listen to the water go by. I love it!

We like to take a picnic with us to Joshua Tree National Park. It’s just a few miles down the road from where we live, but it is higher in elevation, so much cooler than it is down here in the desert. It is dog-friendly, so we bring our two little ones with us and they love sniffing around to see what other creatures have visited to picnic site. They have a really cool picnic area set up of secluded spots with tables for visitors to enjoy that are surrounded by gigantic boulders. The kids love climbing up the boulders and looking around at the scenery. It’s beautiful year-round and we even try to get up there in the winter when there’s a bit of snow for everyone to enjoy.

There is a trail near Piney Creek that, about 1 mile into, has a beautiful view looking out from a cove. Can’t say I have any one favorite picnic site. Where we do like to picnic is near a brook, in the woods, away from the hustle & bustle of the world. Quiet & serene. We have, many times, had picnics along the Blue Ridge Parkway/Skyline Drive. Birds chirping, squirrels investigating what these creatures are doing in their area & maybe even deer or a bear walking by. So no one place, just a meal with Mother Nature.

I would have to say my favorite picnic spot is in my back yard, We have a decent sized area in the back and we can just go into the middle of the lawn and enjoy the family and the dogs on a nice day and there is a great view.

Any state park on the way to my next business stop. Packed lunch or subway to go and my GPS to find me a quiet spot to eat on the way.

My favorite spot for a picnic is next to the lake that we’ve been going to since I was 3 years old for fishing. We used to go every year as a whole family and camp in the Uinta’s until my mom passed away 4 years ago. We are going to start the family tradition again starting August of 2014 and we are all excited to camp and eat 🙂

Favorite spot is the ocean around 5pm, sun going down, crowd gone and just us and the waves and the aggressive seagulls. What fun! we have to share with them even tho we are inviting trouble.

We love to have picnics on the basement floor in the middle of winter. Sure there are way more beautiful spots along rivers and lakes, but our indoor picnics are a silly, fun way to make the best of a long winter.
