Gingerbread Muffins with Orange Marmalade

We’ve been having some beautiful autumn weather here.  The cool, sunshine days make me want to get outside for a picnic.

If you get the picnic itch in the fall too, you’re going to love this recipe and the giveaway too!

Smucker’s sent me a picnic basket full of goodies (and they’re going to send one to one of you too!), including jars of some of their jams.  As soon as I saw the orange marmalade I knew I wanted to create a muffin with it.

Gingerbread pairs wonderfully with orange marmalade and the combination tastes like fall.  And muffins are perfect picnic food.  They travel well and don’t require plates or cutlery.  Be sure to pack some cold apple cider to drink with these!

Here’s what you’ll need to make the muffins:

The cinnamon did not make it into that photo.  I was out, so I sent my son to go get more, but I snapped the photo while he was gone.

Gingerbread Muffins with Orange Marmalade Filling
  • 2 cups flour
  • ½ tsp. salt
  • 1 Tbs. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. ginger
  • ¼ tsp. ground cloves
  • 1 stick butter, softened
  • ¾ cup brown sugar
  • 2 Tbs. molasses
  • 2 eggs
  • ¾ cup milk
  • 1 tsp. vanilla
  • ⅓ - ½ cup orange marmalade
  1. In a large bowl, stir together flour, salt, baking powder and spices.
  2. With an electric mixer, beat butter and sugar in a separate bowl.
  3. Add molasses and eggs to mixer and beat well.
  4. Beat in milk and vanilla until well combined.
  5. Pour liquid ingredients into dry ingredients, stirring with a spoon to combine.
  6. Spoon some batter into 12 greased muffin cups. You'll use half the batter for this step.
  7. Dollop a teaspoon of marmalade onto each muffin.
  8. Top with remaining batter.
  9. Bake at 400 degrees for 15 minutes or until a toothpick comes out clean.

    We live right by the Ohio River so my favorite picnic spot is anywhere along the river. Its usually mildly warm, with a great breeze and the air is filled with the sounds of the rushing water.

  4. We just had a picnic with our church at Camp Talahi in Brighton, MI. It was great, even with a little rain. My favorite picnic place that’s closer to home is at the park down the street.

    Favorite picnic spot here in Paducah, KY is Noble Park! It has a nice little lake with a ton of geese and is very peaceful!

  14. My favorite picnic is to be with the grand-kids. We can make a picnic anywhere, under the table covered with a blanket, in the backyard or at a park. As long as it is with family and loved ones the spot doesn’t matter 🙂

    My favorite picnic spot is our backyard. With four kids with busy schedules it is nice to relax outside and get away but not too far away. There are times when our picnics turn into camp fires and that is perfect.

  29. Living in the mountains of western NC, it is really hard to pick just one favorite picnic spot. I have been blessed to live in a place where it’s almost hard to pick a “bad” place to picnic. But of all the places I’ve been since I moved here, I would say a place called Max Patch is one of my favorites. (definitely Google it to see some pics!) It’s just so peaceful and beautiful and you can see forever in every direction. It really feels like you are picnicing on top of the world. I love the simplicity of Max Patch. There’s nothing there but a trail and a view.

    I enjoy picnicking pretty much anywhere, as long as I take a canoe to get there. We like to float the river in the summer, and find a nice shady spot on the gravel bar to picnic on at lunchtime. Something about being on the water makes us extra hungry! And those Smuckers goodies look delish!

    The favorite picnic spot for my family is on a high hill, under very old trees on our farm. Sometimes the menu consists of peanut butter and jelly sandwiches, chips and cola; other times the menu is fried chicken, potato salad, cole slaw, cola and chocolate cupcakes. Regardless of the menu we have quality family time and lots of fun.

  36. We have the best picnic spot EVER. The river has a a little rocky beach if you climb down the bank at a certain spot. It’s so quiet because it’s off the main trail so you can just sit with your lunch and listen to the water go by. I love it!

    My favorite picnic spot is Sand Harbor beach at Lake Tahoe. I’m fortunate enough to live only 20 minutes away from Tahoe and I love going up there with my kiddos!! It is just gorgeous!!

  42. My favorite place to picnic is Fountain Creek park near my home in Colorado. It is small, but rarely busy, and has a gorgeous view of the mountains. It has covered gazebos so birds and wind don’t get in the way of a nice lunch. 🙂

  47. My favorite spot is Beaver Creek State Park. I haven’t been there in a long time but we always went there when i was a kid. One time my mom packed the coleman stove with tomato soup and grilled cheese sandwiches because it was quite brisk! Great memories there. My parents even took my kids there this summer – it’s quite a drive from where we live now. These muffins look wonderful!

    Hmmm.. We did a few picnic’s while we were up in Eagle River, WI on vacation — just at the park with my boys… Right now at home would be our big backyard!!! Such a neat gift!!!

  60. My favorite picnic spot is back in my parents backgarden in Scotland (on a rare dry day). We live in California now and don’t get to do it very often but did get to go back this summer. When we are back my little boy (9 months old) plays with his super fun 5-yr old cousin while dogs run around us and granny and grandpa are all smiles and love. A picnic can consist of anything from mud pies (literally mud) to homemade egg salad sandwiches – its the simple joys in life that keep you going!

  61. My favorite picnic spot is on the drive up to Mount Rainier in Washington state. We stop at Paradise, about 5,400 and have a picnic lunch. Unfortunately we can only do it once or twice a year when we visit our son in Everett, WA.

    At 70 have traveled ma y great parks in Cincinnati with my sons and now grandsons. All offer wonderful places to set up basket full of goodies and the checkered tablecloth. All you need is time and family to enjoy any park.

    When I was a child we lived right on the coast in England and so the sand dunes were very close to our house. We had this one area of the sand dunes that was our “secret picnic place” – it was like a big crater and super secret! 😉 I tried to find it again once when I was a few years older, but I couldn’t.

  102. We like to take a picnic with us to Joshua Tree National Park. It’s just a few miles down the road from where we live, but it is higher in elevation, so much cooler than it is down here in the desert. It is dog-friendly, so we bring our two little ones with us and they love sniffing around to see what other creatures have visited to picnic site. They have a really cool picnic area set up of secluded spots with tables for visitors to enjoy that are surrounded by gigantic boulders. The kids love climbing up the boulders and looking around at the scenery. It’s beautiful year-round and we even try to get up there in the winter when there’s a bit of snow for everyone to enjoy.

    We are very limited in where to picnic where we live, but we do have a park about 30 minutes away that we have gone to for a picnic before. In the Summer it is so pretty! That’s my favorite place to picnic.

  107. Mmmm, these look delicious so I have pinned them. My family’s favourite picnic spot was destroyed after the February earthquake but we have moved and now love going to the Quarry, which is an old quarry that has been converted into a wetlands area and hiking trails.

  116. With time for families being cut so short with “every day life”, it’s good to go back to simple things and simpler times. Our favorite place to picnic is a little shaded corner of our yard.     My favorite picnic spot is the grounds of Chateau St.Michelle in Woodinville WA. They have the most gorgeous place and the kids always get to see the peacocks, ducks, geese and the trout pond.

There is a trail near Piney Creek that, about 1 mile into, has a beautiful view looking out from a cove. It is just far enough in, that you lose the sounds of the “civilized” world and can enjoy the pure serenity of nature.

    My favorite picnic spot is by the lake I live on. I love taking my son on a nice fall day so we can look at the changing of the leaves reflecting on the water. Plus my son gets to run and play and splash in the lake.

  132. I love picnics anywhere my family is. Be it at a park or at the lake. All about the laughter and seeing beloved family members again. The lake is my personal favorite as you can relax looking at the shimmering water and people boating and having fun. The nice breeze and birds to watch lazily flying over the water.   142. We are blessed to live in a city that has an award winning symphony orchestra. Each summer they do a series of Concerts in the Gardens. The setting is our wonderful botanical gardens, and somehow they do away with the bugs.   152. Can’t say I have any one favorite picnic site. Where we do like to picnic is near a brook, in the woods, away from the hustle & bustle of the world. Quiet & serene. We have, many times, had picnics along the Blue Ridge Parkway/Skyline Drive. Birds chirping, squirrels investigating what these creatures are doing in their area & maybe even deer or a bear walking by. So no one place, just a meal with Mother Nature.

  154. I’ve only ever been on a pinic on beachs, but my girls would love to go to the park where we ride bikes and play on the playground.

  155. I would have to say my favorite picnic spot is in my back yard, We have a decent sized area in the back and we can just go into the middle of the lawn and enjoy the family and the dogs on a nice day and there is a great view.

  156. Any state park on the way to my next business stop. Packed lunch or subway to go and my GPS to find me a quiet spot to eat on the way.

  157. My favorite spot for a picnic is next to the lake that we’ve been going to since I was 3 years old for fishing. We used to go every year as a whole family and camp in the Uinta’s until my mom passed away 4 years ago. We are going to start the family tradition again starting August of 2014 and we are all excited to camp and eat 🙂

  158. Favorite spot is the ocean around 5pm, sun going down, crowd gone and just us and the waves and the aggressive seagulls. What fun! we have to share with them even tho we are inviting trouble.

  161. We love to have picnics on the basement floor in the middle of winter. Sure there are way more beautiful spots along rivers and lakes, but our indoor picnics are a silly, fun way to make the best of a long winter.

  165. My favorite spot for the once in a blue moon picnic is at the beach. The kids get to play and build Sand Castles, while hubby and I relax and enjoy the beautiful scenery.

  166. We like to go to the local park.There’s hiking trails,a pond, and a stream for the kids to catch crawfish and minnows.This basket looks wonderful!!!

  171. My favorite picnic spot is anywhere in our yard with my boys. It can be last minute, and we can run back into the house for anything we forgot! My sons love to have a picnic on the spur of the moment!

  172. my hubby and I take our sailboat out into Mission Bay in San Diego, achor and grill/picnic away off the boat! its our paradise away from home! life seems forever away!

  176. This sounds kind of cheesy, but my favorite place to picnic is where every my family is. We do love a local park in the next town over, downtown. A beautiful place in the fall!

    My favorite picnic spot is along Dawson Lake at Moraine View park in Leroy, IL. My kiddos and I love to take a homeschool break and pack a picnic lunch and head out to the park on a sunny, fall day – like today!!!!!
