We’ve been having some beautiful autumn weather here. The cool, sunshine days make me want to get outside for a picnic.

Smucker’s sent me a picnic basket full of goodies (and they’re going to send one to one of you too!), including jars of some of their jams. As soon as I saw the orange marmalade I knew I wanted to create a muffin with it.
Gingerbread pairs wonderfully with orange marmalade and the combination tastes like fall. And muffins are perfect picnic food. They travel well and don’t require plates or cutlery. Be sure to pack some cold apple cider to drink with these!
Here’s what you’ll need to make the muffins:
The cinnamon did not make it into that photo. I was out, so I sent my son to go get more, but I snapped the photo while he was gone.
Gingerbread Muffins with Orange Marmalade Filling
Ingredients
- 2 cups flour
- 1/2 tsp. salt
- 1 Tbs. baking powder
- 1 tsp. cinnamon
- 1 tsp. ginger
- 1/4 tsp. ground cloves
- 1 stick butter softened
- 3/4 cup brown sugar
- 2 Tbs. molasses
- 2 eggs
- 3/4 cup milk
- 1 tsp. vanilla
- 1/3 - 1/2 cup orange marmalade
Instructions
- In a large bowl, stir together flour, salt, baking powder and spices.
- With an electric mixer, beat butter and sugar in a separate bowl.
- Add molasses and eggs to mixer and beat well.
- Beat in milk and vanilla until well combined.
- Pour liquid ingredients into dry ingredients, stirring with a spoon to combine.
- Spoon some batter into 12 greased muffin cups. You'll use half the batter for this step.
- Dollop a teaspoon of marmalade onto each muffin.
- Top with remaining batter.
- Bake at 400 degrees for 15 minutes or until a toothpick comes out clean.

Here in Columbus, Ohio, we have the most amazing parks and we love to picnic at one of them- The old Deaf School Park with it’s topiary garden! It has taken a Cezanne painting of a park, complete with park visitors (including a monkey being walked by a lady with a parasol as well a pond with row boat) and made an exact larger than life size replica of every park of it in green topiaries! It is a wonder to see and there are picnic tables dotting the park with our large Midwestern trees to shade us from the sun! It is glorious and beautiful and free to all who visit our beautiful City!
We live right by the Ohio River so my favorite picnic spot is anywhere along the river. Its usually mildly warm, with a great breeze and the air is filled with the sounds of the rushing water.
We just had a picnic with our church at Camp Talahi in Brighton, MI. It was great, even with a little rain. My favorite picnic place that’s closer to home is at the park down the street.

Unbelievably I’ve never been on a picnic. But I could easily see myself having one in Central Park. I have to put that on my to-do list for my next trip there.

My favorite picnic is to be with the grand-kids. We can make a picnic anywhere, under the table covered with a blanket, in the backyard or at a park. As long as it is with family and loved ones the spot doesn’t matter 🙂

Living in the mountains of western NC, it is really hard to pick just one favorite picnic spot. I have been blessed to live in a place where it’s almost hard to pick a “bad” place to picnic. But of all the places I’ve been since I moved here, I would say a place called Max Patch is one of my favorites. (definitely Google it to see some pics!) It’s just so peaceful and beautiful and you can see forever in every direction. It really feels like you are picnicing on top of the world. I love the simplicity of Max Patch. There’s nothing there but a trail and a view.
I enjoy picnicking pretty much anywhere, as long as I take a canoe to get there. We like to float the river in the summer, and find a nice shady spot on the gravel bar to picnic on at lunchtime. Something about being on the water makes us extra hungry! And those Smuckers goodies look delish!

My favorite picnic spot is in our backyard. :). We live near a river so we get to enjoy the sound of the river, our nice green grass and big shade tree and then a quick cleanup when we’ve finished.
The favorite picnic spot for my family is on a high hill, under very old trees on our farm. Sometimes the menu consists of peanut butter and jelly sandwiches, chips and cola; other times the menu is fried chicken, potato salad, cole slaw, cola and chocolate cupcakes. Regardless of the menu we have quality family time and lots of fun.
My favorite place to picnic is on the lawn in Millenium Park in downtown Chicago. Nothing beats a warm Summer evening there, watching the stars pop out while listening to wonderful music coming from the Pritzker Pavilion. Now that it’s Autumn, though, we’ll stay closer to home, build a cozy fire to stare into and huddle together for warmth and laughter.
We have the best picnic spot EVER. The river has a a little rocky beach if you climb down the bank at a certain spot. It’s so quiet because it’s off the main trail so you can just sit with your lunch and listen to the water go by. I love it!

My favorite place to picnic is Fountain Creek park near my home in Colorado. It is small, but rarely busy, and has a gorgeous view of the mountains. It has covered gazebos so birds and wind don’t get in the way of a nice lunch. 🙂

My favorite spot is Beaver Creek State Park. I haven’t been there in a long time but we always went there when i was a kid. One time my mom packed the coleman stove with tomato soup and grilled cheese sandwiches because it was quite brisk! Great memories there. My parents even took my kids there this summer – it’s quite a drive from where we live now. These muffins look wonderful!

My favorite picnic spot is Graue Mill near my home. It’s the only operating waterwheel gristmill in the Chicagoland area. It’s beautiful there with lots of paths and a waterfall which is the perfect background sound and scenery that I can think of to have a special picnic time with someone you love.

Our favorite place for a picnic is down by the river in our town. We like to sit under the trees on the bank, watch the wildlife and occasional kayaker, and do some fishing. 🙂
We haven’t had a picnic in a long time since we’ve had our little boy, but I think it’s time we go. We like to go far away either to the beach or up to the mountains to get away from everyone. So peaceful.

Hmmm.. We did a few picnic’s while we were up in Eagle River, WI on vacation — just at the park with my boys… Right now at home would be our big backyard!!! Such a neat gift!!!

My favorite picnic spot is back in my parents backgarden in Scotland (on a rare dry day). We live in California now and don’t get to do it very often but did get to go back this summer. When we are back my little boy (9 months old) plays with his super fun 5-yr old cousin while dogs run around us and granny and grandpa are all smiles and love. A picnic can consist of anything from mud pies (literally mud) to homemade egg salad sandwiches – its the simple joys in life that keep you going!

My favorite picnic spot is on the drive up to Mount Rainier in Washington state. We stop at Paradise, about 5,400 and have a picnic lunch. Unfortunately we can only do it once or twice a year when we visit our son in Everett, WA.

At 70 have traveled ma y great parks in Cincinnati with my sons and now grandsons. All offer wonderful places to set up basket full of goodies and the checkered tablecloth. All you need is time and family to enjoy any park.

My favorite picnic spot is Playa Alicia in the province of Puerto Plata in a little town called Sosua in the Dominican Republic. It’s a very small little beach surrounded by cliffs on two sides and the Carribean on the north. When I was a child we lived right on the coast in England and so the sand dunes were very close to our house. We had this one area of the sand dunes that was our “secret picnic place” – it was like a big crater and super secret! 😉 I tried to find it again once when I was a few years older, but I couldn’t.
Our favorite picnic place is very far away from where we now live. The Oregon Coast, particularly Cannon Beach, is our favorite.

We like to picnic in our back yard. We have 9 trees and also a fire pit. We like to roast marshmallows after a lazy day.
We like to take a picnic with us to Joshua Tree National Park. It’s just a few miles down the road from where we live, but it is higher in elevation, so much cooler than it is down here in the desert. It is dog-friendly, so we bring our two little ones with us and they love sniffing around to see what other creatures have visited to picnic site. They have a really cool picnic area set up of secluded spots with tables for visitors to enjoy that are surrounded by gigantic boulders. The kids love climbing up the boulders and looking around at the scenery. It’s beautiful year-round and we even try to get up there in the winter when there’s a bit of snow for everyone to enjoy.

Mmmm, these look delicious so I have pinned them. My family’s favourite picnic spot was destroyed after the February earthquake but we have moved and now love going to the Quarry, which is an old quarry that has been converted into a wetlands area and hiking trails.

We live near Lake Ontario and we enjoy having picnics up under the big shady trees. We always enjoy a swim and skipping the “perfect” rock over the surface of the lake. The winner has the most skips!

I love to have picnics in lots of different places. I live in Virginia so we enjoy picnics on the beach in the summer months, and in the mountains during the fall. I love both, but the mountains in October when the leaves are changing colors is so beautiful. We love to drive on the Blue Ridge Parkway, or find a path to follow in the mountains. I don’t have a picnic basket to do my picnicking with!

My favorite picnic spot is the grounds of Chateau St.Michelle in Woodinville WA. They have the most gorgeous place and the kids always get to see the peacocks, ducks, geese and the trout pond.

My favorite place to have a picnic is Fon Du Lac Park in Wisconsin… We used to have our family picnics there, but it’s been so very long… I’m now picnicking at the Mountain parks here in So. Cal. or at the local Lake with my family….
My favorite picnic spot is hard to say. I have a few. If I had to pick just one though, it would be in my hometown, Eufaula, OK. There is a trail near Piney Creek that, about 1 mile into, has a beautiful view looking out from a cove. It is just far enough in, that you lose the sounds of the “civilized” world and can enjoy the pure serenity of nature.

I love picnics anywhere my family is. Be it at a park or at the lake. All about the laughter and seeing beloved family members again. The lake is my personal favorite as you can relax looking at the shimmering water and people boating and having fun. The nice breeze and birds to watch lazily flying over the water. We are blessed to live in a city that has an award winning symphony orchestra. Each summer they do a series of Concerts in the Gardens. The setting is our wonderful botanical gardens, and somehow they do away with the bugs. We love to take a picnic, set up our lawn chairs and munch on goodies while listening to the awesome music under the gorgeous sky! The end of the evening culminates with fireworks.

I love picnics! And Smuckers! 🙂 Our favorite picnic spot has to be on our own land. We have plenty of wooded acres and admist all of the beautiful wildlife is a 90ft. waterfall equipped with a swim hole. Above the waterfall is a beautiful opening where you can easily set up a picnic with splendid views from atop of the falls.

Can’t say I have any one favorite picnic site. Where we do like to picnic is near a brook, in the woods, away from the hustle & bustle of the world. Quiet & serene. We have, many times, had picnics along the Blue Ridge Parkway/Skyline Drive. Birds chirping, squirrels investigating what these creatures are doing in their area & maybe even deer or a bear walking by. So no one place, just a meal with Mother Nature.

My favorite spot for a picnic is next to the lake that we’ve been going to since I was 3 years old for fishing. We used to go every year as a whole family and camp in the Uinta’s until my mom passed away 4 years ago. We are going to start the family tradition again starting August of 2014 and we are all excited to camp and eat 🙂
