Instant Pot Cheesy Hamburger Soup
Last fall, we took a family trip to Lancaster, Pennsylvania. As we were planning the trip, our friends kept telling us an Amish-style buffet was a must do, so we added it to our list and dragged the kids, hoping it lived up to the hype.
And oh, did it! The Amish really know how to cook! But the hands-down favorite from that dinner was the Cheesy Hamburger Soup. The kids gobbled it up.
There’s a lot to love here – it tastes like a cheeseburger in a bowl! It also includes a whole bunch of “hidden” vegetables. Once cooked into the soup, my kids won’t notice or protest them – but the good stuff is in there! I just had to recreate it at home, and just in case that wasn’t enough, I figure it’s about time for an Instant Pot Cheesy Hamburger Soup recipe. You’re welcome!
This is made primarily in the Instant Pot, but there is one stove-top step to finish it off. You start by browning the meat and onion together. Drain the grease, add the broth and vegetables, and start the cook time. When it finishes, you’ll make a quick stove-top cheese sauce to mix in.
One of the fun things about this Instant Pot Cheesy Hamburger Soup is you can top it with anything you like to top your cheeseburgers with. An additional sprinkle of shredded cheddar and chives is always popular, but chopped pickles along with a little mustard are a family favorite!
One recipe of this Instant Pot Cheesy Hamburger Soup makes more than enough for a crowd, so it’s great for fall or winter company. You can also easily half the recipe if you’ll have fewer mouths to feed.

Instant Pot Cheesy Hamburger Soup
Ingredients
- 2 lbs. ground beef
- 1 onion, chopped
- 1 quart chicken broth
- 2 cups water
- 4 cups peeled and chopped potatoes
- 1 lb. carrots, diced
- 2-4 stalks celery, diced
- 1 stick butter
- ¾ cup flour
- 3 cups milk
- 1½ lbs. velveeta, cubed
- Salt and pepper, to taste
Instructions
- Hit the saute button and add the ground beef and onion to the pressure cooker pot.
- Cook until no longer pink, breaking up and stirring as you go.
- Remove the pot, drain the grease, and return the pot to the Instant Pot.
- Add the broth, water, and vegetables.
- Close the pot and set the cook time for 10 minutes.
- Let the pressure release naturally for five to ten minutes, then release remaining pressure.
- While the pressure releases, melt the butter in a sauce pan on the stove.
- Whisk in the flour and cook for one minute.
- Whisk in the milk.
- Add the Velveeta and stir until the cheese is melted and the sauce is thickened.
- Add the cheese sauce to the pressure cooker pot and stir to combine.
- Season with salt and pepper.
