The Beef. It’s What’s for Dinner recipe challenge this week was for Beef Pot Roast with Maple Sweet Potatoes. I used the recipe as inspiration and then did my own thing. The roast turned out delicious. It smelled wonderful as it simmered in the slow cooker. The ingredients are a bit strange, and to be honest I wasn’t sure it would turn out at all. But I’m happy to say that we all loved it.
Here’s what you’ll need, and remember not to flip over the weird ingredient combo:
- 1 beef roast (I used eye of round roast)
- onions – 1 or 2 (the red onion was good, but I only had 1/2)
- 1/3 cup chunky applesauce
- 1 can beef broth
- 1 packet Italian dressing mix
Put the roast in a slow cooker. Mix the applesauce, beef broth and Italian dressing mix together and pour over the roast. Cook on high for 4-5 hours or low for 7-8 hours.
I thickened the broth with flour and water. Remove the roast and onions from the crockpot. Turn the heat to high. In a container with a tight-fitting lid, put 3-4 Tbs. of flour and enough water to make the consistency of wall-paper paste. Shake the daylights out of it and gradually whisk it into the broth in the crockpot.
I served this with baked potatoes, but mashed or sweet potatoes would also be good.

We had this for dinner last night and it was so good. I added carrots and potatoes to the crockpot so I wouldn’t have to cook side dishes (and because my mother and grandmother did it that way). My son said, “We sure do get a lot of good recipes from Mrs. Tiffany.”

This dish is in my crock pot as I type. I am looking forward to walking in tonight and smelling that dinner is ready and waiting for us! I am planning to serve with baked potatoes as well. It’s still warm here too, but I am definitely in the mood for fall time food!

I did this with a pork roast, veg broth, and onion soup mix (instead of the Italian Dressing Mix). I added sliced apples halfway through, and it was great. It is very different, but I was inspired by this recipe!

I am making this for tonight’s dinner. I used a pork roast because my family is on a budget. I used garlic and herb dressing packet and added Italian seasoning. I also added potatoes and carrots to my crock pot as well because that’s what I have been taught to do. My house smells so good right now.
