One of the most popular recipes on my site right now is one of the newest – Easy Crockpot Chicken Fajitas by EaH writer, Rachael.
I’ve been wondering about a beef version and some of you have had that thought too. So I decided to give it a try. This could not be easier and it’s really delicious too. The house smelled fantastic the whole time it cooked.
I used beef cut for Milanesa, which I found in Walmart. It’s top round that’s been cut extra thin. You could use other cuts of beef too, but I really liked this very thin beef for this dish. I also used a packet of fajita seasoning instead of taco seasoning.
Here’s what you’ll need:
I served the finished fajita filling in tortillas with shredded cheese. Yum!
Easy Crockpot Beef Fajitas
Ingredients
- 1 large onion sliced
- 3 bell peppers in variety of colors
- 1 1/2 - 2 lbs. thin sliced beef cut in strips
- 1 packet fajita seasoning
Instructions
- Place onions and peppers in crockpot.
- Place sliced beef on top of peppers and onions.
- Sprinkle fajita seasoning over beef.
- Cook on high for 5-6 hours or low for 7-8 hours.
- Serve in tortillas with any fixings you like.
Do you add any water or juice to the crock pot or is it cooking dry?
Lindsey, you don’t need any water. The onions and chicken create enough liquid.
But I thought you used beef
Right! Sorry about that. I have a recipe for chicken that is very similar. Works the same for beef.
Can you mix chicken and beef?
Sure. I haven’t tried it, but I don’t see why it wouldn’t work.
I am planning on using this and the chicken fajita recipe for a party that I’m hosting. I will be having approximately 35 people. Can you give me any guidance on what your recipe serves? Have you ever done this for a large crowd?
Traci, If you do 3 lbs of meat and add more veggies too, it would probably serve around 10. I’ve never done a recipe like this one for that many people. You might be able to get away with doing 3 crockpots full and making it be enough. Especially, if you serve a lot of side dishes with it. ANd I’ve noticed that people tend to eat less when you serve on paper plates, probably because they are a bit smaller than a regular dinner plate.
What size of crock pot did you use?
Erin, my crockpot is 6 quart. You could use a 5 qt though with no problem and possibly smaller than that.
I am curious if I am making the beef fajitas but only have taco seasoning on hand.. will that mess with the recipe much vs/the fajita seasoning?
Taco seasoning should work fine.
Are the veggies soggy after being cooked that long?
Natalie, they aren’t crisp after cooking. One idea would be leave the veggies out until 20 minutes before you’re ready to eat. Then lay them on top of the chicken to cook. That will leave them with more crisp to them.
What would be a good side dish or two, to go along with the Chicken Fajitas?
Chips, salsa, guacamole, refried beans, corn and black bean salad, Mexican rice, tossed salad with tortilla strips and ranch dressing. How do those sound? Merry Christmas!

I just put this together in the crock pot and have it all ready to go for tomorrow’s dinner. It looks like it will be good when it’s all done and it already smells good and it’s not even cooked. I’ll let you know what my family thinks!
Is the beef dried out being in the crockpot that long.
No, it isn’t. The onions, peppers and beef all create broth that keep it from being dry.

Do I stir this occasionally or just before serving??
No need to stir while it’s cooking.
If I’m not adding the onions, will there be enough liquid or should I add water?
I think there will still be enough liquid, even without the onions.

Yes, I think that would work, but I don’t know what the cooking times would be.
What type of beef do you use? Would appreciate suggestions for cuts that come out tender without being too pricey.
I used thin cut top round. But you can use any type you like. If you choose a larger cut of meat, shred it before serving.
