Gingerbread Pancakes with Sweet Cider Syrup

I made these pancakes for dinner last night and they quickly bumped to the top of my “recipes to share” list.  Please schedule a breakfast, brunch, lunch, dinner or snack time to cook up a batch.  You’ll thank me later.

The pancakes are sweetened with molasses and spiced with ginger, cinnamon and allspice.  But it’s the Sweet Cider Syrup that steals the show.

Homemade Baked Beans in the Slow Cooker

Last weekend we had friends over for dinner and I made these baked beans.  They were so good and easy.  I combined ideas from several recipes books, including a church cookbook and the More with Less Cookbook.  The result is a recipe that uses canned beans and cooks in the slow cooker.  I wanted to use the slow cooker because baked beans taste best with a long cooking time, but I didn’t want to heat up the kitchen.

Moosehunter Cookies – Canadian Chocolate Molasses Cookies

I went on a hunt for Canadian treats to eat while we watch the Olympics and found these yummy cookies.  The recipe comes from Mennonite Girls Can Cook.  I’d never visited that blog before, but they have lots of yummy recipes over there.

The cookies are soft and cake-like.  The combination of molasses and chocolate is very good, especially with the white icing on top. [Read more…]

Gingersnap Sandwich Cookies with Orange Cream Cheese Filling

These cookies taste like old-fashioned Christmas.  The flavor combination of molasses, ginger and orange is wonderful.  I found the recipe on Recipe Girl.  She has an awesome list of Christmas cookies.

I did make a couple of adjustments to the recipe.  I doubled it, because I wanted to end up with more than 2 dozen cookies.  I didn’t count how many I had, but it was a lot and it took quite a while to bake them.  They’re so good though, I’m glad I doubled it.  I made a few other adjustments too. Gingerbread Waffles with Vanilla Cream Sauce

Scrumptious!  Gingerbread Waffles are a spiced up version of classic waffles with a touch of molasses.  The vanilla cream sauce compliments the waffles perfectly, although they’re also good with maple syrup.  We drank apple cider with these and it made for a very Octoberish meal. [Read more…]
