Microwave Corn on the Cob

I don’t know if you’ve noticed this about me or not, but I tend to be a simple person.  On top of that, I’m lazy.  I always think I’m going to try grilling corn on the cob like I’ve seen other food bloggers do, but then I’m in a hurry and I don’t feel like messing with it.  I fall back on my old habit of microwaving it instead.  It works just as well as boiling it and it’s easier.

Nachos

A few years ago we were lucky to get to go to Walt Disney World on their free dining plan.  We ate at the Whispering Canyon Cafe in the Wilderness Lodge one day for lunch and ordered Nachos.  They were wonderful.  Meaty, cheesy, just the right amount of spice.  I set about to create a version to make at home and this is what I came up with.  Not only are they delish, they are also easy and quick.

Chicken Fiesta with Black Beans – a crockpot recipe

You’ll be declared “Best Cook” for making this dish and you’ll love yourself too for how easy it is. It’s a great feeling to have dinner all cooked in the crockpot when you get home after a long day, or just to know it’s finished and you’re free during that time before dinner when little ones get very needy.

Chicken Fiesta with Black Beans – a crockpot recipe

Ingredients

  • 3-4 boneless chicken breasts (I like to use the tenders, as they break apart easily while cooking)
  • 15 oz. corn, drained
  • 15, oz black beans, rinsed and drained
  • 1 Tbs. cumin
  • 1 tsp. chili powder
  • onion, sliced
  • green pepper, sliced
  • 14 oz can diced tomatoes
  • 6 oz tomato paste

Instructions

  1. Combine all the ingredients in the slow cooker and mix well.
  2. Cover and cook on high for 5-6 hours or low for 7-8 hours.
  3. Garnish with cheese and serve over cornbread or in tortillas.

Corn Chowder

Comfort food, warm and filling. This soup is all that. I copied the recipe out of a Frugal Gourmet cookbook many years ago. I’ve made a few changes to the original.

Corn Chowder

Corn Chowder

Ingredients

  • 2 qts. chicken stock
  • 1 medium yellow onion, diced
  • 4 Tbs. butter
  • 4 Tbs. flour
  • 4 cups unpeeled, diced potatoes
  • 1 bay leaf
  • 2 cups half & half
  • 1 bag frozen corn
  • 1 can cream corn
  • salt and pepper

Instructions

  1. Heat the chicken stock in a large stock pot.
  2. Saute the onion in butter. Stir in the flour to form a roux and cook it for just a minute.
  3. Add the roux to the broth along with the potatoes and bay leaf.
  4. Cook until the potatoes are fork tender.
  5. Remove the leaf and add the half &half and the corn.
  6. Simmer until hot and season with salt and pepper.
