There may not be anything original about this, but it’s one of my favorite summer suppers. And it only takes minutes to put together. My kids aren’t big fans of tomatoes, so for them I make a cheese pizza or use cooked sausage that I’ve frozen. Either way, everybody is happy and dinner is fast.
Here’s what you’ll need:
- 1 prepared pizza crust
- 1/2 jar prepared pesto sauce
- 3 Roma tomatoes, sliced thin (or use any variety of tomato you have)
- 1 cup mozzarella, shredded
Spread the pesto sauce on the crust. Top with sliced tomatoes and cheese. I used the directions on the crust as my guide for the oven temperature and cooking time.
Serve this with a green salad for complete dinnertime happiness.

I love the way you’re sharingyour weekly recipes with other busy mothers. I pick and choose what my family likes from the weekly recipes and make my own menus. I especially like the shopping list, that is a time saver if you plan to prepare all the menus for that week.
Maybe others don’t print your recipes and gather them in a binder as I do. I wish that the recipes could be condensed to a maximum of two pages. When I print the recipes the pictures are so large, two pictures, and the page is full and there is 2 lines on the second page. I’m still having problems with printing, it seems that your margins are set to about .75. When I punch holes and place the recipes in a book, the holes cover words. I’ve tried everything to correct this but I can’t.
Also, is it possible to place the recipes with pictures in one file the same way as the Menu, Grocery List and Recipes? Otherwise, I thank you for trying and please continue your great work. It’s appreciated.

Deanne, are you using the “print friendly” button to print the recipes? You can choose to not include photos. Would that help?

I make a pizza similar to this but add chopped artichoke hearts and cook it on the grill. If you like artichoke hearts give it a try sometime! 🙂

Sefanie – I’ve been wanting to try grilling my pizzas. We have a gas grill. Do you bake them for the same amount of time as in the oven? Also, have you grilled a pizza with raw pizza dough before? Thanks! Lisa

Hi Lisa,
I’m not Stephanie (although I’m definitely going to try adding those artichokes, yum!) but I have grilled pizza with raw dough. I used three empty tin cans of the same size to raise the pizza pan off the BBQ grill, otherwise it will burn on the bottom before the dough cooks and the cheese melts on top. I can’t really remember how long it took, you’ll need to keep an eye on it. Thanks for reminding me, I think I’ll do that again later this week!! 🙂

I use the Boboli pizza crusts when I grill and we also have a gas grill. I grill the crust face down for a few minutes to get it a little crispy and then top with ingredients. I put it on a cooling rack to cook so the bottom doesn’t burn and cook for 5-7 minutes. It’s great when I don’t feel like turning the oven on to cook!

I love simple pesto pizzas. I like to use cherry tomatoes so you don’t get the whole slice of tomato sliding off onto your chin. Or does that only happen to me? Yummy!

I love tomoato slices on pizza- great way to use them up in the summer time as well… you know, since everyone has a garden these days. Pairs very well with the pesto.

I’ve been a follower for quite awhile and love your recipes and your pictures. You’re so organized. I like to print your recipes with pictures. If the pictures were half their size I would still enjoy your wonderful pictures and would save paper at the same time. Most of the time one or two lines end up on the second page. Single space would be good too between paragraphs. Thanks for the very helpful website. It’s appreciated.
