Instant Pot Mashed Sweet Potatoes
I really like them as a side for fish, but they work with any cut of meat. Just buttered with a little salt and cinnamon is delicious.
Then there’s always the classic sweet potato casserole with the sugared pecan topping. It usually appears at Thanksgiving, but there’s no reason it can’t appear on the table all year long. Especially as quickly as you can make the Instant Pot Mashed Potatoes and have the hard work already done.
If you’re feeling adventurous you can add all kinds of things -crumbled bacon, cinnamon and a dash of garlic powder, cloves or allspice.
Instant Pot Mashed Sweet Potatoes
Ingredients
- 2½ lbs. sweet potatoes
- 1½ cups water
- salt, to taste
- ½ -1 stick butter
- 2 -3 Tbs. brown sugar
Instructions
- Wash potatoes.
- Add the rack to the pressure cooker and place the potatoes on top of the rack. Add a dollop of butter on top. Pour the water over the potatoes.
- Using the manual setting, set the cook time for 10 minutes. Do a natural release for 5 minutes followed by a quick pressure release.
- Remove the pot from the pressure cooker and drain the potatoes.
- Slice potatoes in half and scoop out the middles.
- Place in a bowl with brown sugar and butter.
- Smash and stir with a spoon until well combined.
I recently read that white potatoes contain more protein and fiber and less fat and sugar than their sweet potato counterpart. At the same time, sweet potatoes boast fewer carbs and calories and more vitamin A and vitamin C. I figure that means both of them are healthy in different ways, so I try to include them in my dinner line-up on a regular basis.
